Zucchini Muffins – A King Arthur Baking Recipe

There were so many lovely Zucchini Muffins at the farmers market this weekend so we bought 2 big ones. this recipe used up 3/4 of one!

I like the website King Arthur Baking and I use it often, I find that the recipes work, I have only. had one recipe that did not.

The recipe I used is The Shipyard Galley’s Zucchini Muffins The recipe says to add nuts and raisins or currants but I was giving some of them away to a friend so left all of those additions out. I did not know if they like ‘add-ons’ to their muffins and these were good without any extras inside. That is the only thing I changed to the recipe.

I chose this recipe from among many online for Zucchini Muffins because they are non-dairy/parve! No butter! Oil is used which makes this really easy to mix by hand!

To make the muffins I did not grate the zucchini. I used my food processor with he steel blade and just pulsed it until the zucchini was the size I wanted. Not too fine but no big chunks. I used a 1/3 cup scoop to portion out the muffins and ended up with 20, If you want smaller muffins use a 1/4 cup scoop and you should get 24 muffins I think. I mixed this by hand so no need to dirty a mixer!

Here is the recipe

Ingredients

2 cups grated or chopped Zucchini

4 large eggs

2 cups sugar

1 cup vegetable oil

1/2 tsp vanilla

1 tsp baking powder

1 tsp baking soda

1 tsp salt

1 tsp cinnamon

3 cups flour

Method

Preheat oven to 375f

Line 20-24 muffin tins with muffin paper cups or grease

  1. Prepare the zucchini and set aside
  2. In a large bowl, Beat the eggs then add the sugar and mix well. Mix it until it is lighter in colour. A whisk works well here but you will have to with to a spoon when you add the flour
  3. Add the oil, vanilla, baking powder, baking soda, salt & cinnamon , mix
  4. Now put the flour and zucchini in and mix so that there is not any flour visible! Don’t over mix
  5. Put the batter evenly into the muffin cups, I used a 1/3 cup measuring cup but 1/4 cup works well too The muffin cups should be about 3/4 full
  6. Bake in the preheated oven for 25-30 minutes until brown. You can use a cake tester to make sure they are baked through
  7. Let them sit in the muffin tins a couple minutes then turn them on their side or more to a cooling rack to cool

Poppyseed Hamantaschen

This year my new Hamantaschen recipe is one with a Poppyseed filling using a Poppyseed cookie dough!

Two recipes combine to make this delish cookie!

I adapted the Bon Appetit recipe for the filling and a Poppyseed Cookie recipe that I found online!

This recipe made 41 cookies using a 3 inch glass to cut the circles. The amount you make iwll depend on how thick you roll the dough & the size of the circles.

Make the filling before you start making the dough as it has to cool completely to use it. It can be made the day before, cover & store in the refrigerator.

Here is the filling recipe *The only changes i make is using. water instead of milk and adding more vanilla

Ingredients

1 cup ground poppyseeds (I grind my poppyseeds in a coffee grinder.)

1/2 cup honey

1/2 cup of water or milk

1 tbsp sugar

1 tbsp lemon juice

1/4 tsp salt

1 tsp vanilla

Method

  1. Put all of the ingredients into a saucepan. Stir well. Bring to a boil. Reduce the heat then simmer until the mixture thickens. Stir often. This is finished when you drag a spatula through the filling & it leaves a trail. You want this filling to be thick & not runny. Let cool before using

Cookie Recipe

Ingredients

3 eggs

1 cup sugar

1/4 cup oil

1/4 cup poppyseeds

1 tsp vanilla

3 cups flour

3 tsp baking powder

1/2 tsp salt

Method

  1. Beat the eggs in a bowl of a mixer or you can do this by hand if you choice to.
  2. Add the sugar & mix well
  3. the oil & vanilla, get added now, mix until combined
  4. Next, add the poppyseeds & mix
  5. Put the mixer on low speed & to the bowl add the flour, baking powder & salt. Mix until the dough comes together & scrape down the sides as needed.

Putting this together

On a clean work surface, sprinkle on a bit of flour. Take 1/4 of the dough & roll until it is 1/4 inch thick. Using a round cookie cutter or glass, make circles inthe dough. Pull the bits of dough that are not in the circles away and put back into the bowl. Now, you are going to put the poppyseed filling into each circle. The amount you use depends on the size of the circle. I use a 3 inch glass so i use a heaping teaspoon of filling

To form the triangle, pick up the circle with the filling on it & place it in the palm of your hand. Fold one side up to the middle & pinch the two sides, then put this on the work surface and form it into a triangle.

Bake the Poppyseed Hamantaschen on a lined baking sheet for approx 15 minutes until lightly browned & the dough is cooked. The time will depend on size & thickness.

Hershey’s Premium Double Chocolate Brownies

I really wanted some brownies after posting my Valentines Day post! So, I looked at the old booklet I have from Hersheys that has 8 brown recipes in it and the best Chocolate Frosting recipe and picked this recipe to try HERSHEY’S PREMIUM, DOUBLE CHOCOLATE BROWNIES.

Make this recipe by hand in one bowl so the prep is simple and fast! The only extra bowl you need is something to melt your butter in! This Hershey Premium Double Chocolate Brownie recipe mixes up really easily.

These brownies are dense & chocolatey!!

Here is the recipe!

3/4 cup Cocoa

1/2 tsp baking soda 

2/3 c butter, melted Divide the butter in half. You will use 1/3 of a cup in the cocoa & then you add the remaining 1/3 cup later 

1/2 cup boiling water

2 cups sugar ( this recipe makes a large pan of brownies so it seems like alot of sugar but it works out! )

2 eggs, beaten 

1 tsp vanilla 

1 1/3 c flour 

1/2 cup chopped nuts which is optional. I used walnuts

1 3/4 cup chocolate chips 

Preheat your oven to 350f Grease a 9×13 baking pan 

In a large bowl, mix the cocoa and the baking soda together. Add 1/3 cup melted butter & mix until smooth. Add the boiling water & stir until the mixture gets thicker. Stir in the sugar, beaten eggs & remaining 1/3 cup of melted butter. Add the vanilla & mix well. Now mix in the flour until no more flour is visible. Next, add the nuts & chocolate chips & mix well. Pour the batter into the prepared baking dish. Bake in the preheated oven for 35-40 minutes until the brownie has pulled away from the sides of the pan. Let cool before cutting ( if you can!!)
