These cookies are a favourite of the kids in my family. Bananas & chocolate chips in a cookie! Nothing bad here!! This cookie recipe is made in the food processor & really quick to pull it together. They bake up into little dome shapes & are cake-like, chocolatey & yum!
This recipe is from Norene Gilletz…another one from her THE PLEASURES OF YOUR PROCESSOR, one of my favourite go-to cook books
Make this recipe in your mixer if you do not have a food processor…
I like to take these with me when I go to visit our grandkids.. they travel well as they are a sturdy cookie… I usually have a carry-on suitcase full of baking..since they live away & I love to bake, I like to take baking with me…
Here is the recipe from Norene Gilletz
Ingredients
2/3 cup butter or margarine
1/2 cup white sugar
1/2 cup brown sugar, packed
2 eggs
1/2 tsp vanilla
2 large ripe banana…about 1 cup
2 1/2 cups flour
2 tsp baking powder
1/4 tsp baking soda
pinch of salt
3/4 cup chocolate chips
Method
Preheat oven to 400f Line baking sheets with parchment paper
- In the bowl of your food processor, put the butter, both sugars, eggs & vanilla. Process this for about 2 minutes, scrape down the sides of the bowl a couple of times with a sturdy spatula…sometimes the silicone ones get cut by the blade…
- With the food processor running, drip in chunks of banana & process until blended
- Take the lid off & add the dry ingredients & process, using the pulse function on & off until mixed & you don’t see any flour… scrape down the dishes if needed
- Add the chocolate chips & process with a couple quick on/off
- Drop onto prepared baking sheets.. I use a 1 tbsp cookie scoop… the recipe says to use a tsp but I make mine bigger…
- Bake for 10 – 12 minutes until golden brown
Enjoy!!!
I do not have pictures preparing these cookies…it is really straight forward though…
This recipe make lots.. i got about 4.5 dozen cookies…
Looks too yummy 🙂
