Glazed Purple Plum Cake

This recipe for a Glazed Purple Plum Cake is delicious & a great way to use the Purple Prune Plums that are ine grocery stores now!

I have been making this Glazed Purple Plum Cake recipe for over 30 years. I ripped the recipe page out of a magazine & I really do not remember where it came from… but i did change a couple of ingredients in it. The original recipe is called Pretty Plum Cake

I exchanged the butter & milk in the original recipe for non-dairy ingredients. Vegan margarine, I use Becel Vegan margarine, & water for the milk in the cake & the icing.

This cake froze very well. I kept the Glazed Purple Plum Cake in the springform pan, wrapped it really well with aluminum foil & popped it into the freezer. I took the cake out the day before I wanted to serve it so it would not be too cold. Then a while before I wanted to serve the cake, I made the glaze & drizzled the glaze over the top. Let the cake cool before glazing it if you are going to eat right away!

Ingredients 

12 Purple Plum Prunes

Topping

1/2 cup packed brown sugar

1 1/2 tbsp flour

1 tsp cinnamon

1/4 cup non-dairy margarine

Cake

3/4 cup sugar

1/2 cup non-dairy margarine

2 eggs

1 tsp vanilla

1 1/2 cup flour

1 tsp baking powder

1/4 tsp salt

1/2 cup water

Icing Glaze

3/4 cup icing sugar

1 -2 tbsp water

Method

Preheat oven to 350f

Grease a 9 inch springform pan *** I use a non-stick spray

Prepare the plums by cutting them in half & removing the pit…set them aside for later

Make the topping

  1. Mix the brown sugar, flour & cinnamon together.Mix the margarine into this…I used a fork then my fingers since the margarine was soft….you can use a pastry blender if you want. You just want to make sure the mixture is well combine
  2. Set the topping aside once it is mixed

Make the Cake

  1. Beat the sugar & margarine together until it is mixed well & fluffy
  2. Add the eggs, one at a time & mix after each egg is added.
  3. Scrape down the sides of the bowl with a spatula
  4. Mix in the vanilla
  5. Combine the flour, baking powder & salt
  6. Add the flour mixture to the mixing bowl alternately with the water, beating after each addition. Scrape down the sides of the bowl well
  7. Pour the cake batter into the prepared springform pan
  8. Arrange the plums cut side up on top of the batter
  9. Sprinkle the topping all over the plums & the top of the cake
  10. Bake in the preheated oven for 1 hour or until done
  11. Let the cake cool on a wire rack for at least 10 minutes. While the cake is cooling, make the glaze, you want to put the glaze onto the warm cake if you are serving this cake right away. I froze the cake & put the glaze on after it was defrosted before serving

Make the Glaze

  1. Stir the icing sugar & water together in a bowl
  2. Set aside until the cake has cooled for at least 10 minutes

Remove the cake from the springform pan & place on a serving dish. Drizzle the glaze over the cake…
