Chicken Soup in the Instant Pot *updated Sept/25

Well, I decided to make a chicken soup in the Instant Pot. Usually I cook my soup for hours & hours on the stove & then some more! Lots of skimming & skimming…this is how my grandmother made her chicken soup & my mom & my sisters… but I have found a new way for me!!!! This soup was so delicious…full of flavour…Unless I am going to make a lot of chicken soup for a crowd, I am going to make my chicken soup in the Instant Pot from now on!! The final amount of soup that I got is exactly the amount of water I put in… no evaporation in the Instant Pot.

Soup Time!

I love soup & the older I get I like it even more. My mom was the best soup maker! Everything went into a pot & somehow magic happened. There wasn’t any sautéing of the big three..onion, carrots, celery. She just chopped it all up & cooked it! Not sure how she turned that into a delicious soup but she did!

Here are some soup recipes that I love & make often Some are made in the Instant Pot but you can always make them in a pot on the stove.

One of my Fav Soups for Fall…Potato Leek Soup

We love this Potato Leek Soup, especially in the fall. We don’t really eat soup in the summer & as soon as the leaves start to turn colour & fall off the trees we crave this soup! If you live in a place that does not have a particularly cold fall, well this soup is good for you too!

One of the reasons why I love this version of Potato Leek Soup is that it is VEGAN & PARVE. This is creamy without any dairy products.

My recipe using a recipe from Chatelaine magazine as inspiration. I started making this soup many years ago & have not changed my recipe, it is that good! No need for change!

Gazpacho!!

Fresh tomatoes are everywhere right now. The crops are in & this is one of many delicious ways to use them! I went to my local farmers market yesterday & asked them for ripe tomatoes that they had behind the table..since most people don’t want to buy soft ripe tomatoes unless they are planning on using them right away. Well, it is freezing here where I live!
