Chicken Adobo

I think I am going to make chicken adobo for dinner tonight. It is a really simple recipe. I have seen recipes for chicken adobo lately for the Instantpot, but I am going to make it the ‘old fashioned’ way & cook it on the stove. Sheet Pan Peri-Peri Chicken with Nando’s Sauce

Nandos is a restaurant that started in South Africa ( I think) & we recently, about 1 year ago, had one of these restaurants open here in Edmonton. We stood in line for a very long time to get in the first time we went. The food is good & they have a fantastic pop machine! So when I saw Nando’s PERI-PERI sauce at Costco, I had to buy it.

Chicken Casserole Topped with Cauliflower

I found a bag of cooked shredded chicken in my freezer from a chicken soup I made recently. Since I love chicken pot pie & shepherds pie, why not combine the two but making it healthier by omitting the pastry shell from the potpie & the potatoes from the shepherds pie? Good idea? I think so!

Chicken in an Asian Salad Dressing

I found this Asian salad dressing on Food.com. I use it periodically when I want to have an asian inspired dinner & need a salad dressing that goes along with that! I make a salad that has some greens, vegetables, nuts, sesame seeds & top with some wonton strips or chow mein noodles. This would also be good drizzled on some sautéed  bokchoy, or any cooked veg!
