Hummus & Pita plus a few other dishes!
The other night I made a delicious dinner of Hummus & Pita plus a few other dishes! It was just what we wanted for a ‘beginning of spring dinner!
I bought pre-made frozen Falafel Balls to save a bit of time since.i was going to make the pita & other dishes! They were good & I am pretty sure they are available in most places now, If you can not find frozen Falafel Balls, maybe you can find the dry mix which is quick to use!
The menu was… Homemade Pita, Hummus, red pepper dip ( I will work on that recipe for the blog!), deviled eggs, pickles, cups up cucumbers, roasted cherry tomatoes & roasted cauliflower. I fried up some eggplant slices as well. OH… I can’t forget the tahini sauce too! So good! I have a few recipes on this blog for some of the food we ate so here they are! And.. I have added some recipes I did not make too!! This kind of dinner is just so versatile! You can add anything you like….
For the tahini, I do not have a recipe here … I have a recipe for tahini dressing & tahini sauce with roast potatoes. but here is how to make it , put this in a jar to shake it up or a bowl & uses a whisk, Take 1/2 cup tahini, juice of half a lemon, pinch of salt, & about 4 tbsp of cold water…mix, if this is too thick then add more cold water gradually. Adjust the seasonings…salt etc. you can add more lemon if you want too! Drizzle the tahini sauce over anything & everything!!

Avocado Hummus
I love guacamole & I love hummus…so I combined them. Easy. Also good because I had 1 can of chickpeas & a couple of avocado that were getting nice & ripe so I needed to use them.
This Spiced Beef on a Bed of Hummus is fantastic!!
I just love this meal! A mound of Hummus topped with crispy seasoned ground beef… a tomato salad & pita. Delish!

Murray & I have decided to stay home. We have been home since Sunday night when Murray ran to the grocery store briefly. So even though I have a food blog & love to cook, this situation makes it difficult for me to think about cooking it seems! There is some leftover hummus in the fridge , freshly boiled eggs on the stove, and I’m hungry. My go-to for hard boiled eggs when I want to put them on bread is mayo, but thinking that the hummus would be good, I mashed up the egg, scooped a heaping teaspoon of hummus in it & mixed it up. Warm rye bread toast, the egg/hummus spread on top, a sprinkle of kosher salt , fresh ground pepper & some dried parsley. It was perfect! This isn’t a recipe, but just a really good idea! You should try it sometime & let me know if you like it!

I started making my own over 25 years ago and have come up with a recipe that we love. Lemony & smooth.If you don’t like yours lemony, just add the lemon juice gradually and taste as you go! Eat it with pita, fresh or baked, crackers, vegetables, on toast or just with a spoon! I toasted some pita in the oven which I had frozen when we had too much one time and it is great!
Here is my recipe for Hummus
Hummus
Ingredients
1 can chickpeas, drained & rinsed *** some people peel them to get a smoother hummus but I never want to spend the time doing that!
1 tsp garlic paste ***or 1 clove of garlic minced
3 Tbsp fresh lemon juice *** juice from a whole smallish lemon
1 tsp Kosher salt ***regular table salt is fine
4 Tbsp olive oil
3 heaping tbsp Tahini paste
2 Tbsp water
Method
- Put the chickpeas in a food processor and process until they are smooth. Use a spatula to scrape down the sides *** be careful not to cut the spatula on the blade..I have done that many times!
- Add the remaining ingredients and mix well.
- Serve in a bowl with a bit of olive oil drizzled on top if you would like!
Baked Pita Chips
Preheat oven to 400F ***I just turned my oven on while I was preparing the pitas, so it wasn’t quite at 400 degrees yet
Line 2 baking sheets with parchment paper
Ingredients
I pkg of large pita pockets
olive oil
kosher salt
dried parsley
Method
- Split pitas in half
- Using a pastry brush, brush on some olive oil all over the inside part of the spit pitas
- Sprinkle with kosher salt & any herbs you might like. I like house salt only & some dried partly flakes
- Cut the pitas in triangles…cut in half then half again…or once more to make smaller triangles if you prefer
- Place the triangles on a lined baking sheet, not layered. & put into the oven
- Check after 5 minutes and keep your eye on them as they can burn quickly.
