Sweet Noodle Kugel with Apples & Raisins

This Sweet Noodle Kugel with Apples & Raisins ( you can omit the raisins if you don’t like them!)  is a family recipe of my friend Pnina. I am so honoured that she shared this recipe with me. Perfect for this time of year when there is an abundance of apples….but don’t limit yourself to just eating it now…it is perfect for anytime!

Apple Cake…Smitten Kitchens Apple Sharlotka

When you want an apple pie & your favourite bakery is closed…or you don’t have the time or energy to make a pie at home..this apple cake/dessert…is perfect! It is just a pile of cut apples put into a springform pan, then an easy batter poured over-top of the apples, baked, turned over and voila! Not as sugary as an apple pie, so you have to like the flavour of apples …which we do! It is a very cool recipe…the batter settles into the apples & combines to turn this into a very interesting dish.

Mom’s Sweet Matzo Kugel

Well, this recipe is written on an old white recipe card with no directions.. just ingredients. So I guessed! It turned out nicely. The recipe calls for other fruit, not just apples, but I left out the other fruit since my family would not like the prunes & raisins… but I will put them in the recipe here! The picture does not look great because it is just brown…like almost every kugel dish for passover…but this tastes good!

Here is the recipe 

Mom’s Sweet Matzo Kugel

Ingredients

Batter

5 matzo boards

2 apples

2 eggs, beaten

1 tsp cinnamon

1 tsp salt

2 tbsp sugar

rind of a lemon

3 tbsp oil

Filling

4 apples

juice of 1 lemon

3/4 cup raisins

1/2 cup sugar

1/2 cup pitted prunes

1/2 dried apricots

Directions

Preheat oven to 350f

Grease an 8 inch pan  This recipe does not make a lot of batter so use a small baking pan

  1. Soak the matzo boards until soft, squeeze out the moisture & put into a bowl
  2. Grate the 2 apples, you can leave the skin on & add to the matzo
  3. Add the eggs, cinnamon, salt, sugar & lemon rind & oil. Mix well, this is the batter
  4. Put 1/2  of the batter into the prepared pan, reserving the rest of the batter
  5. For the filling, peel & thinly slice the apples
  6. Combine the sliced apples, lemon juice, raisins, sugar, prunes & apricots together
  7. Put onto the batter base, then top with remaining batter
  8. Bake until brown & fruit is soft, approx 45 minutes
