Fresh tomatoes are everywhere right now. The crops are in & this is one of many delicious ways to use them! Caesar Salad with Toasted Panko Crumbs
Wow! I do not think I will every use croutons again! I loved this Caesar Salad with Toasted Panko Crumbs so much!
I saw a picture of a Caesar Salad with Toasted Panko Cumbs and knew I had to try it. You can use any Caesar Salad recipe you like but I will post the one I used!
I know that these toasted Panko crumbs will be good on any salad, they will add some delicious crunch! When I coat fish with Panko crumbs they get toasted during the cooking process so I already knew how tasty Panko is toasted and crunchy!
Here is the recipe, you can adjust amounts to suit your needs!
Ingredients
1 head of romaine lettuce
1 cup Panko Crumbs
2 tsp olive oil
Shredded or grated Parmesan Cheese for adding as garnish
Anchovies, optional… dice these if Are going to use them
Salad Dressing This is a no egg dressing
2/3 cup olive oil
6 tbsp mayonnaise
2 tsp garlic powder
1/2 juice of a lemon (you can add more if you like your dressing with more lemon flavor!)
1 tsp Worcestershire sauce
Salt & pepper to taste
Method
Preheat oven to 350f
- Wash & dry your lettuce. I like to cut the lettuce, i slice it in half then cut the lettuce in 2 inch pieces so they arent too big.. but you can tear it up too. Whatever you prefer. Put the lettuce into a large bowl that is big enough to toss your salad in
- Toss the Panko Breadcrumbs with the olive oil so that all of the crumbs are coated with the oil. Spread the crumbs evenly on a baking sheet. Bake in the preheated oven for approx.10 minutes but keep an eye on them!! You want the crumbs to be toasted nicely. Stir the crumbs once during the cooking period. When they are toasted to your liking, remove from the oven. Give them a stir & let them cool while you make the salad dressing.
- Make the dressing. Mix all of the ingredients together in a jar & give it a good shake. Taste & adjust the flavour. Add more lemon if you want or salt & pepper.
- If you are using anchovies, you can add them to the dressing or add them directly to the salad. I do that since I do to like anchovies ad Murray does.
- Pour some of the dressing on the lettuce, toss & sprinkle with the toasted Panko Bread Crumbs. You can sprinkle on some Parmesan cheese.

This delicious Blueberry Pudding is a lovely dessert.
I have the recipe in my recipe binders], but I do not know where I got it from! I cut it out of a magazine years ago. It is one of the recipes I saw one time, & thought it would be good- then did not make it! I have to say that I missed out on years of enjoying this Blueberry Pudding!
This Blueberry Pudding has a cake-like texture studded with blueberries, not too sweet which is perfect so you get the real taste of the blueberries.
Very easy to make with few ingredients. You can use fresh or frozen blueberries, though the original recipe calls for frozen blueberries. I like to bake with frozen blueberries to save time.. otherwise I wash & dry the blueberries then sort through to make sure none of the fresh blueberries are moldy, so I prefer to use frozen ones! And, if you keep a bag of frozen blueberries in the freezer you can make anything whenever you want! like these Blueberry Muffins or Blueberry Galette
You can serve this with some ice cream or whipped cream is delicious. On its own is great too ( I sprinkled it with some icing sugar but it quickly got absorbed into the Blueberry Pudding!)
A few recipe notes- This overflows a bit so the bottom of the oven will get some butter on it… my suggestion would be to but a foil lined baking sheet on the oven rack below the baking dish to catch any spills ( I always forget to do this & then regret it!!_. Also note that there is melted butter on the top of this when it comes out of the oven & this is puffed up a bit…as it cools the butter soaks into the pudding & it deflates…

Ingredients
4 cups blueberries, frozen
3/4 cup packed brown sugar
1 tbsp + 1 cup flour
1/2 cup butter, cut into small cubes
1 cup milk
1 egg, beaten
2 tsp grated lemon peel
1/2 tsp vanilla extract
Method
Preheat oven to 350f
Grease a 9 inch round pie plate and the batter filled it up to the top! So next time I am going to use a bit of a deeper dish
1. Put the blueberries into a bowl, add 1/4 cup brown sugar sugar & 1 tbsp of flour. Mix to coat all of the berries
2. Put the blueberry mixture into the prepared baking dish
3. In a bowl, combine the remaining 1 cup of flour with the butter until it resembles a coarse meal. You can use your fingers for this, 2 knives or a pastry cutter. If you want to use a food processor, just pulse until it is to the texture you want & not too fine.
4. Add the remaining 1/2 cup of brown sugar, milk, egg, lemon peel & vanilla. Mix to combine.
5. Pour the batter into the prepared baking dish
6. Bake for about 55 minutes until it is firm in the centre & golden brown. Let cool for at least 10 minutes before serving. You can eat this warm or room temperature. If you want, you can warm up leftovers in the microwave briefly.

Ground Beef Tacos
This Ground Beef Taco recipe makes a delicious quick dinner! No-fuss, one pan & easy to make!
The recipe is from BonAppetit.com…. here is the link to the original recipe… I changed it a bit but not too much.
It is a really simple recipe. Some diced onions are sautéed…some spices are added, then ground beef…cooked until done… some tomatoes, black beans & corn…. almost a chilli but not quite!
My local Italian store has some really nice tortillas..this time I used small corn & wheat ones.
Top these tacos with some avocado & we used hot sauce & salsa!
Easily adapted to your taste..if you don’t want to add black beans..use kidney beans instead. or just leave the beans out if you do not like beans! I love the corn in this recipe, corn adds a nice sweet flavour here.
You can always top these with shredded cheddar cheese if you want or even replace the ground beef with vegan ground round!
Here is the recipe
Ingredients
1 – 2 tbsp oil
1 medium-sized onion, chopped
2 garlic cloves, minced
red pepper flakes… I just put a shake of the jar in…use a s much as you like depending on how ‘hot’ you like your food! you can always spice this up by adding hot sauce when serving
salt & pepper
1 tsp chilli powder
1/2 tsp cumin
1/2 tsp paprika
1 pound of ground beef
1 can of black beans…15 oz can , rinsed
12 cherry tomato..or more i you like, cut in quarters
1 cup of frozen corn… you can thaw this but I did not, I just added the frozen corn & cooked it ling enough so that it was not frozen any more!
1/2 cup water
12 small tortillas
For Garnish,...
1 avocado, finely chopped or mashed if you prefer
salsa
hot sauce
chopped cilantro if you like it
- Heat the oil in a large skillet
- Add the chopped onions & cook until lightly browned
- Add the garlic, cook for a minute or so
- Now, add the red pepper flakes, salt & pepper, chilli powder, cumin & paprika. Mix well
- Add the ground beef breaking up any lumps. mix it well with the other ingredients so that all of the meat is coated with the spices/onion mixture
- Cook until the beef is completely cooked
- Add the black beans, tomatoes, corn & water. Mix to combine all of the ingredients
- Stir often & simmer until the tomatoes are soft, the corn is defrosted & the water has reduced down
- I removed the meat mixture to a bowl & wiped out the skillet, then I warmed up the tortllas in the skillet before serving them
- Top the tortilla with some meat mixture, avocado, salsa etc…

My sister was making this one day & so I had her tell me how to make it! She found out from her friend so I do not know where this recipe originated from but it is delish! Melted chocolate chips, butterscotch chips & peanut butter mixed together, then you add some peanuts & mini marshmallows. Chill, cut & enjoy! I used smooth peanut butter but you can use crunchy peanut butter if you prefer! I cut this into squares & then froze them! They were good frozen but did not take long to soften up if you do not like to eat frozen treats!
Here is the recipe
Ingredients
1 bag of chocolate chips
1 bag of butterscotch chips
1 cup peanut butter
1/2-1 cup peanuts
mini marshmallows, you can use as much as you want! 1/2 – 1 full bag
Method
1 9 x13 pan Spray with non-stick spray
- In a large bowl, melt the chocolate chips, butterscotch chips & peanut butter together. Mix together until well combined
- Add the peanuts, mix
- Add the marshmallows & stir them in until all of the marshmallows are coated with the peanut butter mixture
- Pour into the greased pan
- Chill in the refrigerater until firm
- Cut into squares, any size you want!
