Fresh Strawberry Pie

My sister , Edith, has made this fresh strawberry pie for years. I have always thought it sounded delicious. I was not wrong! This pie is so good you are going to love it! Very easy to make & everyone will be so impressed!

The glaze in this recipe is made from fresh strawberries which I prefer over the packaged strawberry glaze in the grocery stores.

Fresh strawberries are put on top of cream cheese that has been softened & spread in a baked pie shell.  Then the glaze goes on top & this pie is cooed before serving. Serve with a bit of whipped cream & you will have a fantastic dessert!

You need 1 prepared ( baked & cooled) pie crust & a total of 6 cups of strawberries ( 2 lb)

Ingredients

*** YOU WILL NEED A TOTAL OF 6 CUPS OF STRAWBERRIES FOR THIS RECIPE ….THE AMOUNT OF STRAWBERRIES IS DIVIDED BETWEEN THE GLAZE & THE PIE

1  baked & cooled pie shell *** I made my pie shell using the recipe on a package of Crisco but you can use a frozen pie shell if you want.

For the Glaze

1 cup sugar

2 tbsp cornstarch

1/2 cup water

1 cup mashed strawberries

For the Pie

3 oz/85gr softened cream cheese

1 tsp grated lemon peel

5 cups strawberries You can slice them or leave them whole. I like to slice them

whipped cream for garnish

Method

  1. Have your pie shell cooled & ready to fill

Glaze

  1. In a saucepan mix the sugar & cornstarch together
  2. Add the 1/2 cup of water & the mashed strawberries
  3. Cook over medium heat stirring constantly until the mixture gets thick & boils
  4. Boil & stir for 1 minute. Let this mixture cool completely *** you can put this in the fridge to cool quicker if you want

Filling

  1. Meanwhile, beat the cream cheese & lemon peel together until the cream cheese is smooth
  2. Spread the cream cheese mixture evenly in the pie crust. I used an offset spatula to do this but the back of a spoon will work as well
  3. Put the fresh strawberries into the pie shell over the cream cheese. Spread them out evenly
  4. Evenly pour the cooled glaze over the strawberries
  5. Chill the pie for at least 3 hours until the it is set.
  6. Store the pie in the refrigerator
