Turmeric is a very popular ingredient lately. It is turning up in all types of food. We have joined in on the bandwagon & I am trying all kinds of recipes with turmeric added. When I saw this dressing recipe I knew I had to try it. I used it on a salad but it would be used as a sauce… on cooked vegetables, cooked meats… rice.. anything …it is so good.
I used this salad dressing on a ‘soft’ salad… I bought a ‘living’ head of lettuce at my grocery store which was so fresh & delicious. Have you heard of ‘living’ lettuce? It is a small head of lettuce with the roots still attached. The leaves were soft & tender. I added regular salad ingredients…cucumber from a garden, tomatoes from a vine, a fresh carrot that I used a vegetable peeler to make ribbons of carrot… & then some shredded purple cabbage & some dried fruit. We had a salmon burger ( without a bun for some reason) & fresh corn on the cob with the salad for dinner last night.
The recipe calls for almond butter which I didn’t have, so I made some quickly in the food processor..Homemade Almond Butter I like to have some roasted almonds in the freezer so that I can make almond butter whenever we feel like having it, so when I roast some almonds I always roast more than I need for one recipe. The fresh almond butter only lasts for 1 week in the fridge so I don’t make more then one recipe at a time..unless the kids are visiting, then I make more!
Here is the recipe for the dressing….
*** I changed the recipe a bit by using dried ingredient & jarred ginger so I used a jar to shake the dressing in….the original recipe says to use a blender, but it was not necessary with the dried spices… I will give you the ingredients as I used them
Ingredients
1/4 cup fresh lemon juice
3 tbsp water
3 tbsp almond butter
1 tbsp honey
2 tsp turmeric powder
1 tsp minced ginger
1 clove of garlic, minced
1/4 tsp kosher salt
Method
- Combine all of the ingredients in a jar & shake vigorously until all of the ingredients are well combined
