Rhubarb Strawberry Crisp

We have a rhubarb plant in our back yard & we love it! I am always a bit sad when we have used all of the rhubarb from out plant. Looking outside today I see some more stalks of rhubarb which is great because there is a Rhubarb Coffee Cake I want to make! One of my families favourite recipes is this Rhubarb Strawberry Crisp.

My Most Loved Apple Cake Recipe

This recipe for my Mom’s Apple Cake is one of the most popular and viewed recipes on my site! It is a delicious cake, moist & tender studded with pieces of apple.

Perfect for the Jewish Holidays in the fall. Apples are one of the traditional foods people eat at Rosh Hashanah. Apples are dipped in honey & baked into strudels & cakes!

This cake freezes really well so it is perfect to make ahead. Wrap it up tightly in plastic wrap & I always use foil over it as well to ensure the cake stays nice and fresh. Cool completely before wrapping & freezing .

Mom’s Apple Cake isn’t just for the holidays! It is a great cake to use up some apples from trees in the yard or farmers markets! Great all year round you are really going to love this cake!

Canned Tuna with Curry

Canned Tuna with Curry is delicious! I grew up eating tuna sandwiches on white bread with some Old Dutch plain potato chips. Absolute comfort food for me. Don’t get me wrong, I still love a simple tuna salad. Sometimes if my mom was getting fancy she would dice up some Celery to add to the tuna & that was good too. But…Canned Tuna with Curry is fantastic & you may never go back to plain mayo again!

Gazpacho!!

I went to my local farmers market yesterday & asked them for ripe tomatoes that they had behind the table..since most people don’t want to buy soft ripe tomatoes unless they are planning on using them right away. I wanted to make this cold tomato soup NOW so needed those tomatoes ripe & juicy!

Lemon Currant Scones

I love scones. Crispy on the outside, flaky inside. There is a trick to making a good scone I think. Not too much handling of the dough. Like a pie crust. I am not an expert but I like to make them & keep them in the freezer. When I want to eat one, I just pop it in the microwave briefly so it is just defrosted & not over-done.
