Spinach Broccoli Bake

This recipe is great for lunch or as a side dish.

I love this dish. It is filled with vegetables & cheese. What could be better?

I love having this with a salad for lunch or as a side dish with fish. It also makes a nice dish for a buffet as it is easily doubled and baked in a 9×13 pan!

Just make sure that you drain the spinach really well…this is easily done by putting the defrosted spinach in a colander and press it down with a fork getting all of the liquid out. IF your cottage cheese is watery drain it as well. if you don’t it just adds liquid to this dish which could end up being a bit watery.

Spinach Broccoli Bake

Ingredients

1 cup frozen spinach, defrosted and chopped  ***DRAIN  WELL otherwise this will be watery!!

1 cup frozen broccoli, defrosted and chopped  ***DRAIN WELL

4 green onions, chopped

3 eggs, beaten

2 cups cottage cheese, drained

1 1/4 cup grated cheddar cheese ( 1/4 cup of this will be used for the topping)

1/2 tsp salt

pepper

Method

Preheat oven to 350F

Grease a square baking dish

1.Mix all of the ingredients together except the 1/4 cup of cheddar cheese for the top

2. Pour into the prepared pan

3. Sprinkle the top with the 1/4 cup of grated cheddar

4. Bake for 50 minutes

5. Increase oven temperature to 400 F and bake for an additional 5 minutes
