This recipe is great for lunch or as a side dish. No added carbs, just vegetables, cheese and eggs. Quick and easy to put together. I plan on serving this as a side with some fish. Of course, you can eat it any way you want! Even right out of the pan with a spoon, it is so good!

Spinach Broccoli Bake
Ingredients
1 cup frozen spinach, defrosted and chopped ***DRAIN WELL otherwise your bake will be watery!!
1 cup frozen broccoli, defrosted and chopped ***DRAIN WELL
4 green onions, chopped
3 eggs, beaten
2 cups cottage cheese
1 cup grated cheddar cheese + 1/4 cup for the top
1/2 tsp salt
pepper
Method
Preheat oven to 350F
Grease a square baking dish
1.Mix all of the ingredients together except the 1/4 cup of cheddar cheese for the top
2. Pour into the prepared pan
3. Sprinkle the top with the 1/4 cup of grated cheddar
4. Bake for 50 minutes
5. Increase oven temperature to 400 F and bake for an additional 5 minutes
