Miso Vegetable Bowl ( first posted Jan/17)

YUM!!!
My daughter Jacki made this bowl for me one time when I was visiting her in Toronto. She saw the original recipe in Goop..Gwyneth Paltrow’s newsletter, but has adapted the recipe to make it her own. Jacki was happy to share this recipe with you!
It is beyond delicious, healthy, & vegetarian but you can add any protein you might like, chicken breast, salmon or  asian inspired beef strips. I would make a teriyaki salmon or chicken to go with this as the flavour of the teriyaki will compliment the miso dressing.
I served it with home-made green onion cakes that you can see in the bowl!
This recipe makes 2 servings
Ingredients
For the Salad:
1 large sweet potato, peeled and cut into 1 inch cubes
1 small head of broccoli, cut into small florets
4 tbsp olive oil (divided )
2 cups of kale, removed from stalk and sliced thinly or you could use spinach if kale isn’t your thing!
2 tbsp sesame seeds
salt and pepper
Miso Dressing:
2 tbsp white miso paste
1/2 tbsp soy sauce
1 tbsp rice wine vinegar
1 tbsp tahini
1 tabs oil
1 tbsp maple syrup
1 1/2 inch of fresh ginger minced
salt and pepper
Cooked rice, quinoa or rice noodles to serve with the vegetables and dressing.
Directions
1 Make the dressing. Mix all of the ingredients together in a jar and shake (with the lid on!!) until well combined. (I always make my salad dressings in a jam jar)
2. Preheat oven to 375.
Line a being sheet with parchment paper or aluminium foil.  Put the cubed sweet potato onto the baking sheet and season with salt and pepper. Drizzle with 2 tbsp of olive oil and toss with your hands or a large spoon to make sure that the salt and pepper and oil are well distributed among the cubes of sweet potato.
Roast for approx. 20 minutes.
3. Add the broccoli to the potato on the baking sheet and drizzle with the remaining 2 tbsp of olive oil. Using a spatula , toss the broccoli and potatoes together and spread out evenly on the cookie sheet . Put back into the oven and roast for approx 15 minutes until the vegetables are cooked and starting to brown.
4. Remove the vegetables from the oven and put into a large bowl. Add the sliced kale to the hot vegetables and mix together, this will wilt the kale a bit, which i like.
* Option here is to toss the vegetables with the dressing or you can wait and drizzle it on top of them when serving
5. Put some cooked  rice or rice noodles in a bowl. Top with vegetables . Sprinkle sesame seeds on top!
Note: you can eat this without the rice, quinoa or noodles.

Brussel Sprout & Kale Slaw

Brussel Sprouts are not my favourite vegetable by any means. Sometimes if they are roasted & seasoned with maple syrup….haha….I can eat them! But I do like them raw in this salad. Paired with Kale, this is so healthy & fresh.

Vegan Chocolate Cake

Don’t let the word Vegan scare you !!! This cake is delicious. it does not have any eggs or diary which is why it is vegan of course. But, everyone ate it & did not even realize, not that it should matter really, but you know how it is, some people are leery of new things. At first there were a few skeptics, but once they tasted it …. they were won over by the rich chocolate flavour of this cake.

Peanut Energy Balls #3

This recipe is also from Deliciously Ella ( the Sesame Vanilla Energy Balls were from this site)  Dates, oats, peanut butter & peanuts. I checked the calories & the roasted peanuts added so many! The calorie count for 1 cup of dry roasted peanuts is 854! Certainly gets me thinking about grabbing a few handfuls of roasted peanuts! I did a very unscientific & I am sure not accurate estimation of the calorie count of these energy balls by calculating the calories in the amount of dates, oats, peanut butter & peanuts that go into this recipe. Then I divided that number by 25, this recipe made 25 balls, 2 tbsp of mix per ball & came up with approximately 100 calories for each ball. That’s not too bad, but it is the peanuts that upped the count … there is no added sugar & I used natural peanut butter. The original recipe gives the amount for the ingredients by weight, I have weighed them out & measured them in cups so I am putting that here. I have not figured out the calories counts of the other 2 types of energy balls that I have made so far. If you are interested let me know & I can do the same thing for each of them..but remember, this is no way an accurate thing! This recipe called for coconut oil, which I don’t have so I added the amount called for in the recipe with more natural peanut butter

Here is the link to the recipe on Deliciously Ella

https://deliciouslyella.com/peanut-butter-energy-balls/

Here is the recipe without the coconut oil that the original recipe called for. But that is the only change I have made…this recipe is not mine

Peanut Energy Balls

3 cups pitted dates

1 cup quick oats

1 cup roasted peanuts

4 tbsp natural peanut butter

Method

1. Cut the dates in half to ensure that there are no pits left

2. Put the prepared dates, oats, peanuts & peanut butter into a food processor & process until finely minced. Mine mixture did not form into a pasty ball, but when I tried to form a ball with the mixture it held together so I knew it was processed enough

3.Take the blade out of the food processor so you don’t cut your fingers!

4.Form the mixture into balls any size you like. I use 2 tbsp of mixture to form my balls & i got 25 ball

5. Put the balls into the fridge to firm up, bit I ate a couple of right away!

6 .The original recipe from Deliciously Ella says they last a few weeks in the fridge or freeze them to keep longer

Enjoy!
