My friend Pnina has given me recipes over the years but this year she gave me 2 new ones to try! The first one is this delicious & simple baked eggplant casserole.
Continue reading “Sweet & Sour Baked Eggplant” →This is a wonderful recipe for a layered vegetable torte. This is the perfect time of year to make it with all of the fresh vegetables available at farmers markets, but it would be good anytime of year. You can grill the vegetables or roast them before putting this dish together so it is pretty flexible. Easily adapted to be vegan…just leave out the Parmesan topping.

Another recipe from Bon Appetit! This time it is for roasted eggplant, crispy kale, tomatoes & yogurt! We ate this just as is without anything else, but it would be excellent in a pita with some hummus…some falafel… with some fish….rolled up in a wrap… the possibilities are endless!

My good friend gave me this recipe over 20 years ago. Caponata is a combination of eggplants, onions, tomatoes, peppers & olives, dill & basil.
Continue reading “Caponata” →As with Hummus, there are so many recipes for Baba Ganoush & I pretty much like all of them. Some are made with mayonnaise which I really like but the one that I have been making lately uses tahini. Very quick & simple, delicious & healthy. If you can not eat tahini, add mayonnaise in its place. If I am using mayo I add enough to get the colour I like. I know that is not very exact, but somehow it works. I like the baba ganoush to be a medium grey colour if that helps!!
Here is the recipe
Baba Ganoush with Tahini
! medium size eggplant
1 lemon, squeezed *** discard lemon
1 clove of garlic, minced *** tip if using a food processor, you can drop a peeled clove of garlic into the food processor while it is running & it will get minced!!
1 -2 tsp salt
4 tbsp olive oil
3 tbsp tahini *** if you want to make this for Passover, use mayo!
Method
Enjoy!

I made this recipe for Eggplant Parmesan and as I was reading the recipe I realized it is quite involved. Usually, I must confess, I use a jar of store-bought marinara sauce when I make eggplant parmesan!
