When I go to Toronto, there is a dessert called Kokosh Cake that I love. I usually buy it at a place called Hermes on Bathurst Street, the address is 2885 Bathurst Street, North York. Layers of dough surrounded by a delicious chocolate filling…and sometimes I find it with a cinnamon filling which is hard to find…Since I live in Edmonton & I am pretty sure that no one make Kokosh Cake here, I have to make it myself. The recipe I decided to make is from Truffles & Trends…I made 4 small ones from one recipe…2 with 1/2 of the recipe for the chocolate filling on that page & the other one with a cinnamon filing. The recipe calls for butter, but I like to have most of my desserts non-dairy so I use Becel Vegan margarine..you can use any vegan margaine you like.. This chocolate cake is parve & vegan!!! Not all parve dishes are vegan….. but this cake has no eggs so that’s why it is vegan!! It has a rich chocolate flavor, it is moist & delicious. Quick to prepare & does not take long to bake!
Sprinkle to with some red and white sprinkles for Canada Day or red, white & blue for the 4th of July!! Anyway you decorate it … this cake is delicious!

I needed a non-dairy (parve) poppy-seed cake recipe for dinner on Friday night. They aren’t that easy to find. I have a poppyseed chiffon cake recipe I will post sometime, but that is not want I wanted to have now. I found a recipe that was easy to adapt.
Chewy Chocolate Cookies! The deep delicious flavour of this cookie comes from using cocoa powder. It is easy change this cookie up a bit, using the batter as the base, you can add chocolate chips, white chocolate chips, or chopped nuts.

Who doesn’t need more energy?? Or a healthy snack? The original recipe for these are from Minimalistbaker.com. My grandkids love these as a snack so I thought they would be great for some friends of mine who are vegan. I was going to visit them & knew these would be a perfect treat to take over. They don’t like to give their kids sugar & the original recipe calls for dairy-free dark chocolate. All of my vegan chocolate I do have in the house has brown sugar added…so I used cocoa powder instead of the chocolate. I didn’t have any chia seeds, so as suggested in the recipe I used flax. I had to add extra dates as the mixture was a bit too dry. i am going to give you the link to the original recipe & below the link the substitutions I made.
Here is the ingredient list I used
1 1/4 cup pitted dates, cut in half to make sure there were no pits
3 tbsp natural peanut butter with peanuts pieces
1 tbsp flax seed
2/3 cu quick oats
1 tbsp cocoa powder
Mix together in a food processor & then form into balls. I used a cookie scoop.
