Avocado Tomato Salad

We love this quick easy Avocado Tomato Salad! Great on its own or on a taco, in a burrito, for lunch with nacho chips, we just enjoy it everyday!

So simple which is what makes it a perfect quick salad to make. It is similar to a guacamole but it is a salad because the ingredients are chunkier! This is good with nacho chips of course, on tacos… also of course! And as a side when you eat anything!! Its great to spoon it onto grilled fish..the ways to enjoy this are endless!!

This is very easy to adapt to your personal taste! Add less onion, add more tomatoes etc. I will give you my recipe but feel free to make this your own! *** There is cilantro in this recipe. If you don’t like it leave it out!! You could add some chopped flat-leaf parsley if you like

There is raw onion in this salad..if you do not like raw onion you could pickle it quickly .. thinly slice a red onion ( or you can do this with chopped onions too) , & set aside, Mix 1/2 cup apple cider vinegar, 1 tbsp sugar & 1 1/2 tsp kosher salt together with 1 cup of water… Put this into a jar or a bowl that you can cover. Add the sliced red onion making sure that all of the onion is in the liquid. Let this sit at room temperature for about an hour. This will soften the taste of the onions. When you want to use the onions, remove them from the liquid and drain them a bit on paper towel. Then save the remaining onions to add into any salad, in eggs, or on a sandwich or burger!

Ingredients you can adjust the quantity of the ingredients depending on how much you want to make. I prefer to eat it all at one time & not have any leftovers!

2 cups of cherry or grape tomatoes, cut the tomatoes into bite size pieces. I cut mine in half lengthwise

2 ripe avocados

a bunch of washed and dried cilantro, finely chop the cilantro

1/2 finely chopped red onion

Kosher salt

lemon… to squeeze into the salad

olive oil

Method

  1. Put the prepared tomatoes into a large bowl.
  2. Chop up the avocado, add this to the bowl
  3. Next, the cilantro & onion are added
  4. Sprinkle with salt & some lemon juice to taste. Drizzle on some olive oil
  5. Mix well & enjoy!!
