Apple Walnut Arugula Salad…the apple plays beautifully alongside the slightly bitter Arugula, walnuts adding crunch & the dressing is sweet & creamy
Our local Italian Store usually has fresh arugula that they must buy in bulk then package into the perfect size bag for one salad for the two of us! This salad is great the neXt day too if there are any leftovers
I prefer to have a simple protein along side this flavourful Apple Walnut Arugula Salad. Salmon or a chicken breast, alongside a pizza is perfect too!
You can make this salad your own, instead of walnuts add any nut you like or seed.. sunflower or pumpkin seeds would be nice. The fruit is important to this salad so if you do not have or want to use an apple, try a pear or even orange sections would be good! I love it with the apple but the beauty of salads is that you can always adjust the ingredients to your own liking & if you have any food allergies etc.

Ingredients I am giving you amounts for 2 – 4 depending on how you will be serving this.. as a side it is for 4 people, as the main then I would say 2
4 cups lightly packed arugula
1 cup walnuts
12 ( ish) cherry tomatoes
Dressing ( if you like lots of dressing you can double this & then just keep any leftovers for another salad)
2 tbsp mayonnaise
1 tbsp lemon juice
2 tsp brown sugar
1 tbsp olive oil
- prepare your ingredients.. wash & dry the arugula, thinly slice the apple, roughly chop the walnuts & cut the cherry tomatoes any way you like1
- Put the arugula in a large bowl, add the apple, walnuts & tomatoes
- Mix the dressing, add the ingredients in a small jar & give it a good shake!!
- Pour the dressing over the salad & mix to combine!
