Olive Oil Chocolate Chip Cookie Sticks

These non-diary chocolate chip cookie bars are delicious! I was very pleased with how they turned out!

These are similar to biscotti or kamish. in that they are baked in a flat loaf then sliced, but they are softer in texture since they are not double baked or let to dry in the oven.

Super simple to make… I changed the recipe a bit…it calls for some salt & spicy pepper on top, but I didn’t think I would like that & I want to give them to my grandchildren… so I left that out. Adapted slightly from the recipe by Nili Abrahams on the Galilee Green website

Ingredients

1/2 cup Olive Oil

1/2 cup sugar

1/2 cup brown sugar, firmly packed

1 large egg, beaten

1 tsp vanilla

1 1/2 cups flour

1/2 tsp baking soda

pinch of salt

3/4 cup chocolate chips

Method

Preheat oven to 350f

Line a biking sheet with parchment paper

*** You can make this by hand in bowl or use your mix master. I made this ny hand and for some reason had a hard time incorporating the chocolate chips into the batter… I had to squish them in with my hands! So, next time I make this I am going to use my mix master… but I will write up the method as I mad them,,,

  1. In a mixing bowl, combine the oil, sugar & brown sugar & stir to mix well
  2. Add the beaten egg & vanilla, mix
  3. Combine the flour, baking soda & salt, just use a fork to mix the baking soda & salt throughout the flour *** since I had a really hard time combining the chocolate chips after adding the flour by hand… maybe add the chcolate chipe to the flour mixture, then add this all to the wet ingredients but if you don’t want o do this add them in #5
  4. Add the flour mixture to the oil mixture & mix well
  5. Now, add the chocolate chips & mix well
  6. Put the dough onto the prepared baking sheet & form it into a flat log.. 4 inches wide
  7. Bake in the preheated oven for about 20-30 minutes ..the edges should be golden brown
  8. Remove from the oven & let cool for about 10 minutes
  9. Cut into sticks while still warm…
  10. Cut in 18 sticks!
