Rum Cake

I have made this Rum Cake several times & it is always a hit…Murray really likes rum..so I raid the liquor cabinet & make this with whatever rum I find…usually it is a really nice sweet ‘sipping’ rum, but any rum will do.

Strawberry Rhubarb Coffee Cake

This Strawberry Rhubarb Coffee Cake recipe has a delicious cooked filling made with strawberries & rhubarb. So, there is a bit of a ‘process’ to put this together but it is worth it. It makes a large cake, in a 9 x 13 pan, so perfect to take to a pot-luck or for a party! I am freezing it in squares so that I can take some pieces out of the freezer when we want to eat some!

Lamingtons Recipe

My friend Rosemary Kitay came over and we made these Lamingtons together. Lamingtons are little rectangles of  moist delicious sponge cake, dipped into a chocolate coating..more like a liquidy chocolate sauce, and then rolled in coconut.
