What do you do with a pile of spinach in your fridge when you don’t really want a spinach salad? I looked & looked on the internet & nothing really got me too excited!  So I decided to try to make a Spinach Mushroom Strudel. A Spanakopita would have been good but I did not want this side dish to have dairy in it so I could not make Spanakopita.

Butternut Squash Curry

I am not sure how something so simple with so few ingredients can be as delicious as this curry dish is. This is a complete meal on its own with the addition of a starch if you want, but if you are not so much into a completely vegetarian meal, I think this curry would be a wonderful accompaniment to a simple chicken breast, or even add some cooked shredded chicken right into this curry.

Chocolate & Cinnamon Kokosh Cake

When I go to Toronto, there is a dessert called Kokosh Cake that I love. I usually buy it at a place called Hermes on Bathurst Street, the address is 2885 Bathurst Street, North York. Layers of dough surrounded by a delicious chocolate filling…and sometimes I find it with a cinnamon filling which is hard to find…Since I live in Edmonton & I am pretty sure that no one make Kokosh Cake here, I have to make it myself. The recipe I decided to make is from Truffles & Trends…I made 4 small ones from one recipe…2 with 1/2 of the recipe for the chocolate filling on that page & the other one with a cinnamon filing. The recipe calls for butter, but I like to have most of my desserts non-dairy so I use Becel Vegan margarine..you can use any vegan margaine you like.. Earth Balance… whatever, or use the butter….

Roasted Green Beans

When I was growing up we ate green beans…canned green beans….they have a weird kind of taste & colour..& I remember not really liking them. Then we started eating frozen green beans…better- but my mom boiled them…the texture was weird…they kind of squeak when you bite them… I have not opened a can of green beans for many years & ate the frozen ones most of my life.

Green bean casserole is a favorite dish… green beans, mushroom soup & french fried onions…still love this dish! Made with frozen green beans this casserole is quick & simple to make.

But now my fav way to enjoy green beans is Roasted Green Beans

Zelda’s Varenikis

My mother-in-law Zelda is famous for her varenikis. These are different from the pyroghy recipe I posted at the beginning of the year,,,,Peroghy…Pirogi…Pierogi anyway you spell it, they are delicious The peroghy have a dough that has sour cream in it & the dough for the varenikis is dairy free.

Pumpkin Muffins

Why is it that we usually only eat pumpkin foods in the fall? I suppose that pumpkins go along with Halloween & the spices in pumpkin baked goods are “fall” flavours. And of course, maybe Starbucks had something to do with it offering their pumpkin lattes in the fall!

Simple Coleslaw
