What is a kugel? It is a baked kind of pudding…it can be noodles, potatoes, butternut squash….the main ingredient of a kugel is sometimes pre-cooked…mashed…grated… eggs are added ….put it into a baking dish & you have a kugel!
Usually I think of eating butternut squash roasted with some maple syrup or in a delicious soup. Here is recipe for a butternut kugel that is savoury although it is a bit sweet with the added sugar. Feel free to leave this out if you want!
I used to make this many years ago and had forgotten about it but happily I have rediscovered it. Simple yet satisfying. A good side with any kind of protein. This recipe can easily be adapted for Passover, using matzo meal ( matzo crumbs) instead of bread crumbs in the mixture.
Ingredients
3 lb butternut squash, peeled & seed cut in cubes *** you ca use froze butternut for this…just cook it according to the package instrutions so you can mash it
1/4 cup oil
2 eggs
1/2 cup bread crumbs or matzo meal
1 tsp salt
1 tbsp sugar
1/2 cup finely chopped onion
Method
Preheat oven to 375f
Grease a 9 inch square baking dish or casserole dish of the same size
- Boil the prepared butternut squash util soft. Drain off the water then mash using a frok or potato masher
- Mix the rest of the ingredients with the squash, combining well
- Put the squash mixture evenly into the greased baking dish
- Bake for approximately 1 hour until it is cooked through and browned
