This recipe for a Cottage Cheese Pineapple Matzo Kugel is perfect for any lunch or dinner .. even breakfast!
The cookbook I found this recipe. Cottage Cheese Pimple Matzo Kugel, in is called California Kosher from 1991. It is a collection of recipes by members of the Woman’s League of Adam Ari El Synagogue in North Hollywood California. I find that every recipe I have made from this book throughout the years is always good! The author of this recipe is Alice Greenfield and if you have the book it is on page 42 called Pineapple-Cheese Pesach Kugel.
Originally the recipe calls for canned crushed pineapple which I did not have but I did have frozen pineapple in my freezer. So I took out the right amount & diced it up!
You can serve this with sour cream or the author suggests putting a mixture of sour cream, sugar & lemon juice on top & baking for another 10 minutes in a hot oven of 400f. I have never done that, I prefer to have some sour cream or yogurt with it. Fruit on top is also great.
Here is the recipe
Ingredients
6 matzos, broken up, moistened & drained
6 eggs
2 cups milk ( I forgot to put the milk in!!!!!!!)
2 cups cottage cheese
3/4 cup sugar
Pinch of salt
3 tbsp lemon juice
Rind of half a lemon, grated
1 cup diced pineapple or one 8 oz can of crushed pineapple, drained
1/4 cup butter, melted
Cinnamon sugar
Method
Grease a 9×13 baking dish
Preheat oven to 350f
1. Prepare the matzo, by breaking it up in a colander, pour warm water over it while mixing it around a bit so all of the matzo gets moistened. Let drain until you are ready to add it to the rest of the ingredients
2. Beat the eggs in a large bowl
3. Add the milk & cottage cheese, mix well
4. To the bowl, add in the sugar, salt, pineapple , mix well
5. Now the matzo goes in, mix to make sure that all of the ingredients are really well combined.
6. The ingredients now go into the prepared baking dish, spread it out evenly.
7. Drizzle the melted butter over the entire top & then sprinkle with cinnamon sugar
8. This goes into the preheated oven for 1 hour until cooked all the way through & brown
Let cool a bit before serving
