Sweet & Slightly Spicy Chicken

I love a sweet chicken recipe & Murray likes a more savoury chicken dish. This one fits the bill! BBQ sauce & hot sauce for Murray & jam for me !

This is an adapted recipe from one I found in my mom’s recipe box!

Sweet & Slightly Spicy Chicken

Ingredients

1 cup up chicken

1 onion, diced

1/4 cup apricot jam

1/4 cup BBQ sauce, any kind you like

2 tbsp soya sauce

1 tbsp Sriracha Hot Chili Sauce

Method

  1. Put the cut-up onion in the bottom of a roasting pan
  2. Place  the chicken pieces on top of the onion in a single layer
  3. In a bowl, mix the apricot jam, BBQ sauce, soya sauce & Sriracha Hot chili sauce together. Spread over the chicken
  4. Bake in the oven, at 350f,  uncovered, basting often until cooked through & then bake some more, until the chicken is nice &  crispy brown
