Dasha’s Bean Salad

I was visiting Murray’s aunt a few months ago & went through her recipes! This bean salad recipe is most likely from the 70’s she said! Written on a scrap of paper…I do not know where she got the recipe from.

I made this the other day to check it out & I love it! not too much vinegar or sugar…although I thought it would be way too sweet as it has 1 cup of sugar..but there is a lot of dressing & I serve the bean salad using a slotted spoon so we are not ‘eating’ the vinaigrette so….we are not having so much sugar! ( maybe!)

It makes a really large amount & keeps in the fridge for 2 weeks…which is great since we only eat a bit of it at a time…this would be great for a party..since it would serve a lot of people!

It is really simple to make. Just some canned vegetables & beans & a simple dressing. The original recipe calls for a fresh pepper cut up & added to this but I did not use one. ( I forgot!)

 Here is the recipe..

Ingredients

Salad

1 can of cut green beans

1 can of cut wax ( yellow) beans

1 can of kidney beans

! can of lima beans…***I could not find lima beans in the store I was in so I used a can of mixed beans

1 green pepper *** I did not put this in

1 red onion

Dressing

1/4 cup white vinegar

1 cup sugar

1/2 cup oil

1 tsp salt

1 tsp celery seed

 

Method

Use a large bowl to mix this salad in

  1. Drain & rinse the green beans & put them into the bowl
  2. Drain & rinse the wax beans, add them to the bowl
  3. Drain & rinse the kidney beans, add these to the bowl
  4. Drain the lima beans..or whatever type of beans you are using & add these to the bowl
  5. If you are going to put the green pepper in the bean salad,  seed & dice the pepper & add to the beans
  6. Thinly slice the red pepper & add to the bowl
  7. Mix all the ingredients in the bowl together & set aside
  8. Now, mix the dressing in a bowl or measuring cup or jar..somewhere you can mix it together well
  9. Add the dressing to the beans & mix it well
  10. I put this salad into a large ziplock bag for a few hours & in the fridge so that the beans could get marinated …I turned the bag once in a while/…
  11. Then I put this bean salad into a large jar… you can use a large bowl with a lid…
  12. This keeps for 2 weeks in the fridge
