Whole Wheat Blueberry Muffins

This muffin recipe doesn’t have any eggs in it! At first I thought that perhaps there was a mistake in the recipe but decided that I would try to make them anyway.

I found the recipe on the King Arthur Flour website. I have put the link to the recipe below.

They are delicious! The texture of these muffins is not light and fluffy, but rather dense and hearty.

I am not sure if the dense texture is due to the lack of eggs or the whole wheat flour, perhaps a combination of both. Whatever the reason, these are worth giving a try.
