Lemon Currant Scones

I love scones. Crispy on the outside, flaky inside. There is a trick to making a good scone I think. Not too much handling of the dough. Like a pie crust. I am not an expert but I like to make them & keep them in the freezer. When I want to eat one, I just pop it in the microwave briefly so it is just defrosted & not over-done.

Cold Chicken, vegetable & noodle salad

I posted this recipe for a Cold Chicken, Vegetable & Noodle Salad first in 2017 & I continue to love it! I have updated it a bit!

This dish can be eaten cold or warm (we prefer it cold)  This comes together very quickly even though there are several steps to the recipe. While the chicken is cooking, you get everything else cooked & then mix it all together & enjoy!

Dasha’s Cottage Cheese Pie

An old family recipe for a cottage cheese ‘pie’ baked in a square pan…so not really a ‘pie’ but not a square either! This recipe has a cake like bottom, cottage cheese filling & cake like top… slightly sweet but not too much sugar…baked to a golden brown. But it isn’t really a cake either! You will just have to make it & decide what to call it yourself!!
