This Honey Mustard Yogurt Salad Dressing will be delicious on any salad!
I used this Honey Mustard Yogurt Salad Dressing on a salad today for lunch. One thing I love about salads aside from the obvious health benefits for eating your vegetables is that if you have a tasty & delicious salad dressing you can add any ingredients that you want! I like to add a protein when I have a salad for lunch. It can be leftover chicken, tuna, any leftover fish, chickpeas… whatever your stomach desires!! In todays lunch salad I had arugula, sliced celery, diced peppers, cubed cucmbers, sliced almonds & sliced pieces of apple. I added a hard boiled egg which I just chopped up!
Here is the recipe inspired by a recipe on Cookie&Kate.com
Ingredients
1/2 cup plain yogurt
1/4 cup olive oil
1/4 cup dijon mustard
3 tbsp white wine vinegar
1/4 cup honey or to taste
3 tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp salt
Method
Mix all of the ingredients together & mix well. ***I put everything into a jar & used a mini whisk. I tried to shake it as I usually do with salad dressings but the yogurt did not mix in well so if you do not have a mini whisk you can use a fork or mix this in a bowl then store any left-overs in a jar in the refrigerator.
This would be great as a dip for vegetables as well. And, if you do not keep kosher this would be great eaten with chicken fingers!
Enjoy!
