Living Greens Salad with Blackberries

I love the living greens lettuce ( I think that is what it is called…lettuce that has the root attached) … it is available at Costco & most of the grocery stores that I go to. but you can use butter lettuce for this salad…any soft sweet kind of lettuce

Simple & light in flavour, this salad is great on a warm summer night…

The lettuce has tender leaves & the blackberries are fresh & sweet ( well…some are sweet, some are not!!) ….I added thin slices of mini sweet cucumbers…. & I used a simple light vinaigrette just to enhance the delicate lettuce flavour.

Here is the recipe

1  Head of tender lettuce…. living greens or butter lettuce… I would not use a bitter lettuce mix for this salad

2 mini cucumbers

1 cups blackberries… or you can use any fruit you like

2 mini cucumbers

Dressing

1/4 cup oil….I used grape seed oil but use whatever oil you like

3 tbsp seasoned rice vinegar

1 tbsp sugar

1/2 tsp salt

pepper

Method

  1. Wash & dry the lettuce… you can leave the leaves whole or break them into bite-size pieces.
  2. Put the lettuce into a bowl
  3. Cut the cucumbers into thin slices… I cut them on an angle. Put the cucumbers on the lettuce
  4. Wash & dry the blackberries & put them on the lettuce & cucumbers
  5. Make the dressing…mix the oil, seasoned rice vinegar, sugar, salt & pepper together in a small jar & give it a good shake! Check the seasonings & adjust o your taste…
  6. Pour the dressing over the salad… I did not use all of it, but use as much as you like
  7. Toss & enjoy!
