This Macaroni Salad is a bit different then some recipes I see. The recipe was given to me when I lived in Yellowknife over 30 years ago. I had actually forgotten about it, but when I was looking through my recipe book, there it was! I am happy I found it!
Simple ingredients blend together to make this tasty Macaroni Salad. The original recipe calls for the addition of a can of salmon, but I made it without since I was serving it as a side to some salmon burgers. With the canned salmon added to it, or I am sure a can of tuna would be just as good, it could be the main dish with a side salad….lunch or dinner!
Here is the recipe
Ingredients
2 cups cooked & drained macaroni *** 1 cup uncooked
2/3 cup Catalina salad dressing
3/4 cup diced celery
1/2 cup chopped red onion •••• I do not love raw onion so I think I would leave this out next time…maybe I will add some of the pickled onions from the jar of sweet pickles…..
1/4 cup chopped sweet pickles
1/2 cup mayonnaise
1 can salmon or tuna *** optional
Optional.. I think that some cooled cooked peas would be a good addition to this macaroni salad
Method
- Mix the cooked macaroni with the 2/3 cup Catalina salad dressing & let stand for 15 – 20 minutes
- Add the remaining ingredients…the celery, red onion, sweet pickles & mayonnaise *** add the peas if using
- Add the canned salmon or tuna if using
- Chill & serve cold
