Chocolate Marshmallow Roll

Super simple, this can be made ahead & everyone, not just the kids, eat it up! It is good for Passover but all year round as well. My friend gave me this recipe when our kids were young,
It actually takes about 10 minutes to make … not including cooling time

Here is the recipe

Chocolate Marshmallow Roll

Ingredients

1  9 oz/255 g, pkg chocolate chips, kosher for Passover if you are making it for Passover

1 tsp oil, suitable for Passover

1  8 oz/227g  pkg of mini marshmallows, I use coloured marshmallows

Method

  1. Put the chocolate chips into a bowl & add the oil
  2. Microwave the chocolate/oil until melted… stir until smooth
  3. Add the mini marshmallows & stir until they are all coated with chocolate
  4. Take 2 large sheets of aluminum foil
  5. Taking 1/2 of the marshmallow mixture, put it onto one sheet of foil & using the foil, form into a log. Wrap it up & twist the sides to seal
  6. Cool until firm &/or ready to serve
  7. Slice to serve

Chocolate Walnut Marshmallow Fudge

Chocolate Walnut Marshmallow Fudge! This fudge is just so easy to make! Perfect to take as a gift, just put the fudge into a tin or a lovely dish & there you have it! This will be a well appreciated gift for everyone!

My fav fudge has nuts in it so this recipe is a winner for me! Oh… & marshmallows… and chocolate ? Delish!

The recipe is from the Eagle Brand website so I knew it would be great!

You are going to want to make this over and over! The Ingredients are Chocolate Chips, a jar of condensed milk, butter, vanilla, walnuts & marshmallows!

NOTE: This fudge would be delish without nuts too so if you don’t like nuts or some has an allergy, leave them out!

Here is the recipe

Ingredients

3 cups of chocolate chips

1 300 ml can sweetened condensed milk

4 tablespoons of butter, you will use this divided

a pinch of salt

11/2 tsp vanilla

1 cup chopped walnuts *** pecans would be good too

2 cup mini marshmallow. ***but I am sure you can use large marshmallows if that is what you have!

Method

You need a square 9×9 dish Line the dish with parchment or wax paper & then spray the paper with cooking spray. TIP: Leave about an inch of an overhang with the paper so it is easy to lift yah fudge out of the pan when you are ready to cut it

  1. Melt the 3 cups of chocolate chips, the can of sweetened condensed milk, 2 tbsp of butter & salt. You can do this in a saucepan over medium heat stirring often or in a microwave on medium heat stirring after every minute until melted. I don’t know how long this will take, it depends on your microwave actually but be careful not to burn this or you will have to start again!
  2. When melted, stir in the vanilla & nuts. Spread evenly into the prepared pan & set aside
  3. now, melt the marshmallows with the remaining 2 tbsp butter. Stir often. When the marshmallows are melted pour them over top of the fudge. Using a knife swirl the marshmallow through the fudge
  4. Chill for at ;east 2 hours in the fridge before cutting. Lift the fudge out of the pan with the overhang you left of parchment paper. Put onto a cutting board & cut into squares. You can cut them into any size squares you like!

No-Bake Peanut Butter Squares

This No-Bake Peanut Butter Square recipe is from Kraft Canada. I had everything I needed in my pantry so that made this very  easy. It  only took a few minutes to put together. The chilling time was the longest part of this recipe.

I printed out this recipe in 2008 & on the paper I have written in a bright colours sharpie {this is the peanut butter squares everyone likes!) I like to make it for company on any dessert platter & also just to have for a snack! 

The ingredients are easy…nothing special, but when combines!! They are delish! Butter, graham wafer crumbs, icing sugar & peanut butter…then chocolate chips! So good 

This No-Bake Peanut Butter Square takes minutes to make & has to chill a bit to firm up 

Here is the recipe  from Kraft Canada. note: I used chocolate chips instead of baking chocolate that was in the original recipe 

Ingredients 

1/2 cup butter

2 cups icing sugar 

1 1/2 cups graham wafer squares

1 cup peanut butter 

12 oz chocolate chips 

Method

Line a 13 x 9 baking dish with parchment paper with some overhang so you can pull the squares up out of the dish to cut

  1. Melt the butter, then add the icing sugar..sift it into the bowl to get rid of any lumps
  2. Add the graham wafer squares & peanut butter. Mix well until completely combined 
  3. Pat this evenly into the prepared 9 x 13 dish
  4. Melt the chocolate & let it cool briefly then spread it over the base
  5. Let this cool & then cut partially into squares.. the recipe recommends cutting this into 40 squares but of course you can cut the squares any size you want
  6. Chill in the fridge for at least an hour
  7. Lift the squares out of the pan & cut all the way through

Passover Chocolate Chip Cookies

Who doesn’t love chocolate chip cookies? I have made lots of Passover chocolate chip cookies over the years & this my favourite. My kids liked them when they were young (& they still do) & the little kids in my life now like them as well.

Even if you do to follow Passover, you could make these cookies!!! They are that good!

Chocolate Bar Pie

This recipe is from my sister Edith & she gave it to me probably 25 years ago. I have looked for the original recipe, Hershey Bar Pie, but can not find it anywhere that is exactly the same as this one. The recipes I have seen on the internet call for Cool Whip & a pre-made graham crust. Certainly using a pre-made graham crust & Cool Whip makes this very easy & quick. I have made this as the recipe I have, with a quick home made no-bake graham pie crust…chilling it in the freezer while getting the filling ready.*** be careful not to leave it in the freezer too long & real whipped cream, unsweetened since the other ingredients are sweet. I like that this recipe is using real whipped cream..my personal preference rather then using Cool Whip. The filling is sweet, creamy & smooth. I grated some semi-sweet chocolate on top of the pie to finish it.

This is the recipe I have from my sister

Chocolate Bar Pie

Ingredients

1  prepared 9″ graham cracker crust *** home made or bought is fine

1  8 oz milk chocolate bar, broken in pieces *** I used a Neilson Jersey Milk Bar

1/3 cup milk

1 1/3 cup mini marshmallows

1 cup whipping cream

Method

1. Make a graham wafer crust… I just used the recipe on the box of graham wafer crumbs &       chilled the crust in the freezer while I was getting everything else ready

2. Combine the chocolate bar, milk & marshmallows in a microwave safe bowl. Microwave for 1 1/2 to 2/ 1/2 minutes. Stir after 1 1/2 minutes. continue in the microwave until mixture is melted & smooth, stirring every 30 seconds

3. Cool chocolate mixture completely *** I put it in the freezer to cool

4. Whip the cream until stiff.

5. Fold the whipped cream into the cooled chocolate mixture.*** Add a bit of whipped cream to start & mix well, then fold the rest in.

6. Spoon into the crust

7. Chill for several hours until firm

*** I think this is meant for a bought graham crust shell…it didn’t fill up my pie pan enough so I will top it will a layer of whip cream I guess since the shell is not completely full !!!
