Passover Kamish/Mandelbroit

I have tried so many recipes for Passover Kamish & finally I asked my sister Edith for her recipe, She sent it right away. It is simple to prepare!

I love this recipe .All the ingredients are mixed together in one bowl & then the batter has to sit in the fridge for at least an hour or longer so it is very convieneint to make at this busy time! I mixed this by hand in one bowl so it was easy clean-up

I like to make all Kamish at the end of the day so that it can sit in the hot oven to dry overnight.

I plan on snacking on these the whole week of Passover!

I do not know where my sister got this recipe!

Here is the recipe

Ingredients

3 eggs

3/4 cup sugar

3/4 cup oil

1 tsp cinnamon

3/4 cup cake meal

1/4 cup matzo meal

3/4 cup sliced almonds

cinnamon sugar to sprinkle on the baked kamish

Method

  1. Beat the eggs in a large bowl
  2. Add the sugar & beat well
  3. Whisk in the oil
  4. Sift the cinnamon, cake meal & matzo meal right into the bowl with the egg mixture. Stir well
  5. Add the nuts & mix to combine
  6. Cover the bowl & put into the refrigerator for at least an hour to firm up. This can stay in the fridge up to 24 hours according to the recipe!
  7. When ready to bake preheat your oven to 350f
  8. Line a baking sheet with parchment. Take the dough & divide it in half. Form a long log from each half on the prepared baking sheet. The dough is sticky so you can sampan your hands to do this. I made my logs about 3 inches wide and about 10 inches long ( ish)
  9. Bake in the. preheated oven until brown approx 30 minutes. Take the baking sheet out of the oven. Turns the oven off. Slice the logs as thick as you like your pieces to be! lay them flat on the hot baking sheet. Sprinkle with the cinnamon sugar Put back into the hot oven to dry. I leave them in the oven overnight
