Ice Box Cake – made with Tea Cookies

I love dessert & especially love one that is easy and quick to put together. This Ice Box Cake can stay in the fridge & is perfect for company or just to snack on.

I saw this recipe on the website The Nosher. One of my favorite recipe sites. The recipe uses kosher products the may not be available to you but I will mention an appropriate substitute. The recipe made a large 9 x 13 pan of dessert. I thought it would be too much for Murray and I but we managed to get through it! It wasn’t hard! The longer this stayed in the refrigerator the better it got!

This Ice Box Cake – Made with Tea Cookies is similar to many other layered refrigerator cakes.. One of my all-time favorites is on this blog Chocolate Chip Cookie & Kahula Torte .

Tea cookies that are dipped in coffee then layered with a mixture of vanilla pudding, cream, sugar & milk, put in the fridge to chill overnight, or a least 6 hours, ( then the cookies get soft and it is delish!) The coffee gives this a bit of a Tiramisu vibe.

I used the Osem Petit Beurre biscuits… 1 !/2 packages… If you can’t find them you could use the Social Tea Biscuits but you will need 2 boxes as these cookies are about half the size of the Osem ones

Ingredients

2 cups heavy cream

1 cup milk

1 80g pkg of vanilla pudding

1/4 cup sugar

pinch of salt

1 cup Greek yogurt

2 tsp vanila

9 oz of a Tea Biscuits, use Kedem vanilla tea biscuits or 2 sleeves Osem Petit Beurre biscuits. I used the Osem cookies. You can substitute the Social Tea Biscuit or really any biscuit that is similar

1 cup cold coffee ( I actually used instant decaf coffee)

chocolate to garnish.. I used a semi-sweet square of chocolate

Method a 9 x 13 dish

  1. In a large bowl, beat the heavy cream, milk, vanilla pudding, sugar, salt & yogurt together until it is thick. You can do this by hand with a whisk or use a beate. The beater should leave a line in the mixture when run through it.
  2. To assemble, dip one cookie at a pimento the coffee for a couple of seconds then line the bottom the 9 x 13 pan. Spread 1/3 of the pudding mixture evenly over the cookies. Do another layer of dipped cookies then 1/2 of the remaining cream , then a third layer of cookies and the rest of the cream mixture.
  3. Grate some chocolate all over the top
  4. Cover and put in the refrigerator for at least 6 hours or longer sot those cookies get nice and soft1

Ingredients
The thickened filling, cookies & coffee
Dip the cookies into the cold coffee and line the bottom of the dish
Put 1/2 of he filling on the first layer of Cookes
One layer done
All three layers done
Grating chocolate
Sprinkle the grated chocolate evenly over the top
