Mushroom & Black Bean Vegetarian Burgers

I saw this recipe on Bon Appetit, it is one of their BA’s Best.  Mushroom & Black Bean Vegetarian Burgers  There are a lot of ingredients in this recipe & I had most of them at home. I did have to substitute some things. Full of vegetables & black beans, this burger is delicious & even a die-hard meat-eater would like these. There isn’t any meat substitute which I like. There is cheese & eggs in this recipe so it is not a vegan veggie burger, but it is really good

The mushrooms & black beans are roasted which enhance their flavour. The texture of the mixture was soft so I doubt that these would work on a grill but if you have a grill pan for the BBQ, you could cook these on that!  These Mushroom & Black Bean Vegetarian Burgers will stay on my menu! The sauce that is with this recipe is really good. I had a lot left over so I actually used it as a salad dressing the next day. I froze the leftover burgers & when we go to eat them, I will just make a fresh batch of the sauce!

Here is the recipe  with the substitutions I made… I did not have any barley or smoked paprika …

Vegetarian Burgers with Mushrooms & Black Beans

Ingredients

1 pound brown mushrooms, cleaned *** you can use while button mushrooms here too

2 tbsp olive oil, divided   you will use 1 tbsp for the mushrooms & 1 tbsp for the black beans

pepper

1 can of black beans, drained

1 onion, finely chopped

1 clove garlic, minced

1/2 cup unsalted, roasted cashews

1/3 cup old-fashioned oats

1/4 cup mayonnaise

1 large egg yolk

1 tbsp miso

1 tsp chili powder

1/2 tsp honey

1/2 tsp paprika

pinch of cayenne pepper

1/2 cup grated cheddar cheese

 Sauce for the Burgers

1/2 cup mayonnaise

2 tbsp ketchup

1 tbsp finely grated onion 

1 tbsp sweet burger relish

2 tsp adobo sauce from a can of chipotle chilies in adobo *** interestingly I had a can of this in my pantry…..not sure what you could substitute it with, but I’m sure you can just leave it out…or add a bit of hot sauce

1/8 tsp celery salt

1/8 tsp kosher salt

Method

Preheat oven to 350f

Prepare 2 baking sheets by lining them with aluminum foil

  1. Stem & chop the mushrooms. Put them onto one of the prepared baking sheets & sprinkle with salt & pepper & toss with 1 tbsp oil
  2. Roast the mushrooms until they are tender & have shrunk in size. You will see the moisture come away from them…takes about 15 min depending on what size they are. When done remove from the oven &  let them cool
  3. Using the other prepared baking sheet, spread the black beans on it in an even layer
  4. Roast the black beans. They will split & dry out around the edges….takes about 10 minutes  Let them cool  *** I roasted the mushrooms & the black beans at the same time & let them cool while I did the rest of the recipe
  5. Heat the remaining 1 tbsp oil in a saute pan & cook the onion & garlic until they are soft. Stir often. Let cool.
  6. In a food processor, pulse the cashews & oats until they are finely chopped.
  7. In a large bowl, combine the mayonnaise, egg yolk, miso, chill powder, honey, paprika & cayenne together.
  8. To the mayonnaise mixture, add the onions, cooled roasted mushrooms *** don’t add the liquid form the pan if there is any
  9. Next add the roasted & cooled black beans
  10. Now add the cashew/oats *** you still need the food processor so don’t put it away yet
  11. Mix well & then use a potato masher to mash it all together
  12. Next step is, take some of the mashed mixture, recipe says to take 1/4 of it, & put it in the food processor, pulse & finely chop it. Add it back to the mashed mixture
  13. Now…we are getting close to being done…add the grated cheddar cheese. Season with salt & pepper
  14. Form the mixture into 6 patties
  15. Using the skillet that you used for the onions, or a cast iron skillet, heat some oil. Cook the patties until brown on both sides

MAKE THE BURGER SAUCE

  1. In a bowl, whisk the mayonnaise, ketchup, onion, relish & spices together

Gather any toppings you would like for your burgers

  • sliced tomato
  • lettuce
  • pickles
  • sliced avocado
  • onion …pickled red onions would be good
  • and of course any kind of bun you would like to put your burgers on!
