We were just in Kelowna B.C. & picked up a case of peaches are our favourite orchard in West Kelowna. Paynters. We have been getting our fruit there for many years! This year they did not have any of their own peaches but they had so many from other orchards in the Okanagan. Now the what to do with all of them? I gave several away, I made this Peach Crisp & some Peach Muffins. I am slicing the majority of them & freezing them to use in smoothies during the winter!

The recipe for this Peach Crisp is simple. You can use fresh peaches, peeled or unpeeled…up to you, or use frozen peaches or canned will work too! All equally delicious in this recipe!
I added some sugar to the peaches but that is up to you! Depends on how sweet & ripe the peaches are & how sweet you like your cooked fruit to be! I added some corn starch to the peaches so that they bake up a bit jammy but that is also up to you !! If you like clear juice do not add the corn starch! I do it both ways… these were just so juicy I thought they needed a bit of corn starch to firm up the base a bit!
I have made this recipe VEGAN/PARVE/NON-DAIRY by using oil in the topping!!

Ingredients
5 cups of sliced peaches ( I can’t say how many peaches that is because it depends on the size! If you buy too many that’s a good thing..so you can enjoy eating them fresh!)
1 – 2 tbsp cornstarch ( I used 2 for these really juicy peaches but 1 would have been fine!)
2 tbsp granulated sugar
Topping
1/2 cup flour
2/3 cup brown sugar
1/2 cup oats
1 tsp cinnamon
1/3 cup oil ( I use oil to make this non-dairy) *** I accidentally used 1/2 cup of oil so the top was not as crispy as I like… use 1/3 cup!
Method
Preheat your oven to 350f
grease a 8 x 8 square baking dish
- Toss the peaches with the cornstarch & sugar. Put them evenly into the prepared baking dish.
- Make the topping…combine the flour, brown sugar, oats & cinnamon in a bowl. Give this a mix to combine. Then add the oil. Use a fork or your fingers ( clean ones!) to combine until all of the dry ingredients are moist
- Spread the topping all over the top of the peaches
- Bake in a preheated oven for 45-50 minutes… This is done when the topping is crispy & the peaches are bubbling up around the edges.
- Let cool before serving
Serving suggestion... Eat this plain or with a scoop of ice cream or some whipped cream!! To keep this non-dairy, use coconut whip or a non-dairy ice cream!
