Rhubarb Strawberry Compote

A compote is a simple fruit sauce made with fruit & sugar, cooked on the stove until the fruit is soft. We have a rhubarb plant in our back yard. Every year when the stalks are ready we harvest the rhubarb. The first thing I make is this Rhubarb Strawberry Compote.

There is not really a recipe for this but I tried to pay attention to how I made this batch! You can adjust the ingredients. I use mostly rhubarb because we love rhubarb, but if strawberry is your fav, use more strawberries. The amount of sugar depends on your taste, if you like it sweet add more sugar or less if you would like the compote more tart.

I love to eat this many different ways, on toast is great, swirled into yogurt, mixed in with a chia pudding, on ice cream, spooned over cake.. or anytime I walk by the fridge I sometimes like to have a spoonful!

Here is my recipe for Rhubarb Strawberry Compote

4 cups diced rhubarb

1 – 2 cups cut-up strawberries

1/2 cup sugar

1/4 cup water

Method

  1. Add the rhubarb, strawberries, sugar & water to a saucepan, give it a good mix. Start cooking over medium heat stirring often until the fruit has cooked down & is nicely combined & soft
