Simple Granola with Coconut

This is a recipe for granola that is really nice!

The original recipe is from The Kitchen.com. I changed it a bit.. that’s the beauty of granola actually, you can customize it as long as the ratio of dry ingredients to wet are good. Otherwise the dry ingredients won’t get coated evenly with the wet ingredients!

I love just snacking on granola and of course adding it to any yogurt! ! Add some dry fruit to this after it is baked , eat it with milk & fresh fruit,,, its an easy good recipe

Ingredients, with my changes

3 cups oats, I used old-fashioned oats but it is ok with whatever oats you hav

1 cup sliced almonds

1 cups coconut, I used sweetened but unsweetened is good too

1 tbsp flax seed, I just like the texture!

1 tbsp kosher salt

1/3 oil, I used canola but olive oil is good in granola

1/2 cup maple syrup

1/2 tsp cinnamon

Method

you will need a baking sheet with sides, you can line this with parchment paper but not neceddary

Preheat the oven to 300f

1, Mix the dry ingredients in to a large bowl

2. Add the wet ingredients & mix well so that everything is well combined

3. Spread evenly onto the baking sheet… if you like your granola bark-like, press it down firmly

4. Put into the preheated oven. Stir after 20 minutes but if you want the pieces don’t stir the all of the granola! Bake for another 20 minutes !

5. Let cool on the baking sheet then I store the granola in glass jars. I you do not think you will eat it quickly you can freeze some & leave some out! i do that all the time !
