Cauliflower or Potato Casserole with Dill

This recipe is from a label that came with some fresh dill…I found it in my mom’s recipe box…

The original recipe calls for potatoes but I made it first with cauliflower…

(The pictures below are from when I used the cauliflower but the method is the same with either the cauliflower or potato..)

It is a delicious side dish when made with either the potatoes or cauliflower. I ate the casserole made with cauliflower for lunch. I cut it up into large pieces which I wrapped individually with plastic wrap, put those pieces into a large ziplock bag & pulled out a piece ..or 2.. for my lunch! We ate the potato casserole as a side dish with fish. Either are a perfect accompaniment in any meal.

The name on the little piece of paper is FIVE-B-PRODUCE… I think is the company that sold the dill.

Here is the recipe with a few of my own modifications

The ingredients are the same for both ways to make this casserole except for using either cauliflower or potatoes

Ingredients

1 head of cauliflower or 6 potatoes, chopped into small pieces

1 onion, chopped

2 eggs, beaten

1 -2 tbsp chopped dill

salt & pepper

(1/4 cup butter … I did not use the butter with the cauliflower ….but I think when using the potatoes they need the butter for creaminess.)

1 cup of grated cheddar cheese & more for sprinkling on top of the casserole

Method 

Preheat oven to 350f   Grease a 9 x 9 square baking dish

  1. Boil the cauliflower or potato with the onion until soft
  2. While the vegetables are cooking, combine the beaten eggs & chopped dill
  3. Drain the pot
  4. Mash the cauliflower/potato & onion together
  5. Add the butter to the hot vegetables if you are using the butter
  6. Add the cheese to the hot vegetables & mix well. You want the ingredients really well combined
  7. Put the mixture into the prepared baking dish
  8. Sprinkle cheese on top…as much as you would like
  9. Cover the dish with foil
  10. Bake covered for 30 minutes
  11. Remove the foil & continue baking for another 15 minutes..to 30 minutes or until the casserole is as brown as you want it to be!

Add the chopped onion to the cauliflower/potato, cover with water & boil until tender

While the cauliflower/potatoes are boiling, beat the eggs & add the chopped dill

Mash the cooked cauliflower/potato & onions

Add the grated cheese & mix

Put the mixture in a greased 9″ square baking dish

Sprinkle the top with extra cheese

Cover with foil & bake for 30 minutes

Remove he foil from the casserole & continue baking for another 15-30 minutes… I baked mine for 30 minutes since I like my casseroles to be nice & crispy…just watch it after 15 minutes & remove when it is how you like it!
