I love Halloumi cheese. We had some the other night, pan seared & a spinach salad dressed with a greek salad dressing. We had some salmon burgers & homemade tzatziki as well.
My favourite fish store, Ocean Odyssey Inland, makes their own salmon burgers. I just happened to be there right after the fish had been prepared to be made into the patties so I bought 4 burgers once they were ready. There were very lightly seasoned so next time I will add some more seasoning, which is perfect so that their customers can make them as they want. I just pan seared them.
The cheese, I sliced it & pan seared it until it was brown on both sides in a bit of oil. Squeeze some fresh lemon juice on it before eating…yum!
The salad was spinach, sliced cucumbers, thinly sliced yellow pepper, tomato slices & sliced kalamata olives.
The dressing: 1/2 cup olive oil, 1/3 cup vinegar, 3 tsp sugar, 1/4 tsp oregano, 1/4 tsp salt & pepper mix together or buy some greek salad dressing
The Salmon Burgers: just pan sear in a bit of oil until completely cooked
The tzatziki was pretty easy to put together: these are the ingredients, recipe is from Claire Robinson on foodnetwork.com the link is below
1 cup Greek whole milk yogurt
1 English cucumber, seeded, finely grated and drained
1 cloves garlic, finely minced
1 teaspoon lemon zest plus 1 tablespoon fresh lemon juice
2 tablespoons chopped fresh dill
Kosher salt & pepper
1 Mix everything together & chill
