Fresh tomatoes are everywhere right now. The crops are in & this is one of many delicious ways to use them! We love quinoa so when a recipe I saw suggested to serve the main with coconut rice, I thought I would make Coconut Quinoa. Luckily, I had the only 2 main ingredients needed for this simple & delicious side dish.
This is a wonderful recipe for a layered vegetable torte. This is the perfect time of year to make it with all of the fresh vegetables available at farmers markets, but it would be good anytime of year. You can grill the vegetables or roast them before putting this dish together so it is pretty flexible. Easily adapted to be vegan…just leave out the Parmesan topping.

We are invited out tonight & I am bringing this broccoli salad! It is crunchy, colourful & slightly sweet… Broccoli, purple cabbage, grated carrot …. and a few other ingredients. This salad is quick to put together & a good accompianment to any meal!
