This is a recipe for No-Bake Oatmeal Coconut Cookies I got when I lived in Yellowknife over 35 years ago!
The Yellowknife Playschool would have a bake sale & that is where I first tasted these cookies. They are very simple to make & kids love them!
I find them a bit sweet because this time I used sweetened coconut, that is all I had in the house. It would be a good idea if you purchased unsweetened coconut to have for this recipe.
After these cookies harden, store them in an air-tight container & you can even freeze them if there are too many!
Here is the recipe for these No-Bake oatmeal Coconut Cookies
1 1/2 cup granulated sugar
1/2 cup butter
1/2 cup milk
3 cups oats
1 cup unsweetened coconut
4 tbsp cocoa
1 tsp vanilla
Pinch of salt
You will need 2 baking sheets for this recipe to let the cookies harden on. You can line them with parchment paper if you want but that is not necessary as you will not be baking these.
1. Bring the sugar, butter & milk to a boil & then let boil for 3 minutes. S
2. Meanwhile, combine the oats, coconut, cocoa together in a large heat resistant bowl
3. Pour the boiled sugar mixture into the dry ingredients.. Add the vanilla, pinch of salt & mix well
4 Using a cookie scoop or a tablespoon, scoop the cookie mixture onto the baking sheets. Let sit to harden then store in airtight container.
