Cod in a Tomato & Kale Curry

Cod with Tomato Curry … delicious! I love this dish. So quick & simple!

The original recipe is from Bon Appetite. I did not have all of the ingredients for the original recipe so I adjusted it and added some frozen kale which I love to have in the freezer. Frozen kale and frozen spinach.. my favs to have on hand all the time. My other new favorite thing to have in the pantry is canned cherry tomatoes. If you don’t have that the original recipe says to use fresh of course or larger tomatoes cut up. I don’t always have enough fresh tomatoes in the house so I would use canned chopped tomatoes for this if you can’t find canned cherry tomatoes

The recipe really only took about 30 minutes start to finial. I served this on B
basmati rice so I had the rice cooking while I mad the fish. Timing worked out really well.

This recipe serves 2 but I made the original amount of sauce so you can add more fish to this,

Here’s the recipe with my changes from he original

Ingredients

1 can, 14 oz/398 ml, cherry tomatoes

1 can coconut milk

1 tsp ground ginger

1 tsp ground garlic

1/2 tsp turmeric

1 tsp ground coriander

1/4 ground cardamon

2 tsp sugar

1/4 tsp red chili flakes ( add more if you want it spicier)

kosher salt

2 cups chopped frozen kale ,, (you can leave this our if you do not have it or microwave some chopped kale to cook it then add the cooked kale to the sauce)

2-4 Cod fillets ( I like the frozen cod from Costco)

Cooked Basmati rice to serve

Method

  1. In a saucepan large enough to hold the sauce and fish. put the whole can of cherry tomatoes into the pot. Break up some of the tomatoes & let this simmer for about 2 minutes.
  2. Mix in the can of coconut milk & stir well. Simmer for another 2-3 minutes
  3. Add the dry spices & sugar, mix well. Add a couple pinches of kosher salt, Stir & simmer for 5 minutes. Stirring often
  4. Put the kale into the sauce if you are using it, if frozen cook the kale in the sauce for about 5 minutes until the kale is defrosted
  5. Taste the sauce and adjust the seasonings
  6. Bring the sauce to a gentle boil & nestle the Cod filets into the sauce. Spoon some of the sauce over the fish if the fish is poking up over the sauce! It took about 15-20 minutes to cook the fish completely but the time depends on how thick the fish is so watch it to check making sure it is cooked before serving
  7. Continue cooking until the sauce is slightly thickened and reduced
  8. Serve the fish over the prepared rice
