The weather is HOT here…we need Gazpacho!

The temps are rising in Edmonton this week & it’s the perfect weather for cold soup!

We love this fast and easy Gazpacho! I am running to the market to buy some fresh vegetables for this! I need a cucumber, pepper, some tomatoes & I also need some tomato juice. Then home to mix it all together in the food processor !
