Pickle Brined Chicken Strips

I made these for dinner yesterday & we loved them.. there really isn’t a recipe but I did make a video

Just take come chicken strips & put them in some dill pickle juice… I put this into a ziplock bag.. Put the bag into a bowl or some dish so that the juice does not leak out into your fridge… put into the fridge overnight.

Before you are ready to cook these Preheat your oven to 400f

Line a baking sheet with foil & spray the foil with non-stick spray or you can use some neutral oil, not olive oil Set aside

Put some cornflake crumbs into a shallow dish …the amount depends on how much chicken you are making.. I used 2 full chicken breasts and used about 1 1/2 cups corn flake crumbs… you can use any bread crumbs you want for this.. Add some dried parsley if you have some to the crumbs..set aside

Take 2 eggs and break them into a shallow dish, whisk them up & add some water. Season with salt & pepper if you want… especially if you are using plain bread crumbs…then you need some salt for sure…set aside

Now…Take the chicken out of the fridge & you can put them into a bowl for easy access.

You are going to dip each chicken strip into the egg, then coat all over with the crumbs.. put onto the prepared baking sheet. Continue until all of your chicken strips are coated & on the sheeet

Pop into the preheated oven & cook until done… if your strips are thin it will take about 10-15 minutes.. mine were thick so it took longer. Check to make sure the chicken is cooked throughly!!!

While the chicken was cooking I made a dip… I didn’t need much so I used 1/4 cup mayo & a squirt of ketchup & a much smaller squirt of hot sauce… mix together & taste.. adjust to your liking…. sweeter add more ketchup.. hotter..add more hot sauce!

I served this with frozen cooked tater tots and a salad!
