Chicken Coconut Curry – Nik Sharma

My son-in-law made a couple recipes from the book last week & I am going to share one of the chicken dishes. Chicken Coconut Curry The recipe is delicious . I think you should consider buying this cookbook.. He also made the Samosa Pie which was outstanding.

I am going to write the method in my own words but I am not changing anything else

This recipe serves 4

Ingredients

1 cup of unsweetened fresh or desiccated coocnut

4 cloves (we used powdered cloves… 1/2 tsp)

1 tsp black peppercorns

1 tsp ground coriander

1 tsp ground cumin

6 cloves garlic, peeled

1 inch of peeled fresh ginger

1 green chili (we only had a red one so we used that )

1 cup of Boiling water

2 tbsp coconut oil (we used canola oil)

1 large onion, half the onion & thinly slice

1 tsp ground turmeric

1/2 tsp chili powder

3 lb bone-in chicken thighs & drumsticks ( you can use just thighs if you want…or even boneless breasts)

1 cup water

2 tbsp cider vinegar

2 Tbsp cilantro ( optional of course if you don’t like it!)

Method

  1. Use a large saucepan & toast the coconut until it is golden brown
  2. Add the cloves, peppercorns, coriander & cumin . Cook until the spices become fragrant
  3. Put this spiced coconut into a container of a blender. Add the garlic, ginger & chilli. Set the saucepan aside .you are going to use it to make the chicken
  4. Pour the boiling water into the container & pulse until this becomes smooth … it will be a smooth paste.
  5. Heat the oil in the saucepan & sauté the onion until it is golden brown
  6. Add the turmeric, stir & cook for about 30 seconds
  7. Add the chili powder & give it a stir, cook for 2 minutes
  8. Add the chicken pieces brown for 4 -5 minutes then add the coconut mixture from the blender
  9. Stir in 1 cup of water, bring to a boil, then lower heat & cook for 30-45 minutes until the chicken is cooked completely
  10. Stir in the vinegar.. this step really adds delicious flavour .. cook for 1 minute
  11. Taste & adjust seasonings… adding salt if needed
  12. When ready garnish with cilantro if using.

I took the meat off the bone .. this was good as all of it was covered in sauce!
Served this with rice & peas! YUM
