After making so many granola recipes I finally made my own recipe that I love!
I love all the different recipes I have tried, some more than others of course!
We go through quite a bit of granola. We usually sprinkle it on some plain greek style yogurt with fruit. It adds a nice sweet crunch which cuts the tartness of the plain yogurt. Even a yogurt that is sweetened is always better with a bit of granola!
For years I bought granola. I didn’t really realize how quick & simple it is to make it at home. This recipe is really my personal adaption of a recipe I have been making from the Martha Stewart website. I like that recipe but it is a bit sweet for us so I cut down the sweeteners, added some flax seeds & used different nuts. I think I am going to just stick to this recipe from now on! I have tried several different versions of many recipes & this is the one I like the best!
I don’t add dry fruit to the granola when it is stored in a jar… I add it as I am eating it since everyone in my house seems to like different dried fruit in their granola or none at all! I like to cut up some dates in mine, or some dried blueberries I get at Costco.. they are delicious just eating them by the handful! Any fruit you like can be added to this granola, but add it after the granola is cooked otherwise the fruit just gets too dry & hard
One of the things I love about homemade granola is that you can adjust recipes to your liking. I use walnuts, but if you don’t like walnuts, add any chopped nits you like..almonds are always a good choice. If you like more of less coconut..go for it! Sometimes I use large flake old-fashioned oats & sometimes I use the quick oats… depends on what I have in the pantry. This recipe in the picture is with quick oats. I do prefer the large flake oats but this is just fine too. I add flax seeds because I like chewing those little seeds but they are not necessary! So you can take this basic recipe & adjust it, though I would not add more quantities of each item as then the liquid to dry ratio will be off a bit.

Here is the recipe, (following the method from Martha Stewart for the Dark chocolate Cherry Granola on the website )
2 3/4 cups rolled oats
1 cup unsweetened coconut..but if you only have sweetened use it! The granola will just be sweeter!
1 cup chopped walnuts.. I love walnuts in my granola
1/4 – 1/2 cup pipitas ( pumpkin seeds)
2 tbsp flax seeds
4 tbsp maple syrup
4 tbsp olive oil
1/4 cup brown sugar
2 tsp kosher salt
Dried Fruit… you can use any dried fruit you like after the granola is cooked. If you are using big pieces of fruit like dates or figs or apricots, cut them into bite size pieces.
Preheat oven to 300f
Line a baking sheet with parchment paper
- Mix the oats, coconut, walnuts, pipitas & flax seeds together in a heat-resistant bowl & set aside
- In a small saucepan, combine the maple syrup, olive oil, brown sugar & salt
- Heat on medium until the sugar melts, stir often
- Remove from the stove & pour into the dry oat mixture
- Stir well until all of the dry ingredients are coated with the liquid
- Put onto the prepared baking sheet, Spread out the granola mixture so it covers the entire baking sheet
- Bake in the preheated oven, stir every 15 minutes, for 35-45 minutes until evenly browned, You want your granola to be crispy, When you give the granola a stir, spread it out again so it cooks evenly
- Remove from oven & let cool on the baking sheet
- I store my granola in a glass sealing jar
- You can freeze some if you are not going to use it all
