Actually, a bit of a story about this cookbook. I saw it at my daughters home in November & then I decided it looked so great that I would buy it for my daughter-in-law..but I had it shipped to my house! Smart right? I am ‘borrowing’ it until I can take it to her the next time we go to visit them! She is totally fine with that of course!!

I have tried 2 recipes so far from the book. I will post each recipe separately….otherwise it is just too long a post!!!
The first one is the Tahini and Olive Oil Granola on page 78. I overbaked this granola so my advise is to watch it closely. I thought I was but I left it a bit too long between checking on it! This granola isn’t overly sweet which is nice. The tahini gives it a slightly bitter taste but not overly so. I also did not stir it enough so there where large bits which I really like so next time I make this I may leave it more chunky.

*** Granola is a personal thing like all food, but unlike a cake recipe, you can adjust the ingredients to your taste or if you have any allergies. Just leave out some of the ingredients but keep the general idea of it… if you can’t have sesame seeds, leave them out… if you don’t have any date syrup, taste the granola before baking & if you want it sweeter add some more maple syrup
2 1/2 cups oats ** the recipe calls for old fashioned oats i only had quick oats so I used them
3/4 cup chopped nuts. I used walnuts
1/3 cup unsweetened coconut
1/4 cup pumpkin seeds
2 tbsp sunflower seeds
2 tbsp sesame seeds
2/3 cup tahini paste ( luckily I always have this in the fridge)
1/2 cup olive oil
1/3 cup brown sugar, lightly packed
1/4 cup maple syrup
1/4 cup silan… which is date syrup *** if you don’t have this i am sure you can leave it out
2 tsp vanilla extract
1 1/2 tsp salt… *** the recipe calls for fine sea salt, I did not have this so used Kosher salt
*** also, the recipe calls for dried fruit which I did not put in… I find when it bakes it gets too hard & my son does not like fruit added…you can add dried fruit before you eat it!!
preheat the oven to 350f
You need one large rimmed baking sheet
- Mix the oats, nuts, coconut & seeds together in a large bowl
- In another bowl, mix the tahini, olive oil, brown sugar, maple syrup, silan, vanilla & salt together
- Pour the liquid ingredients over the oat mixture & mix well
- Spread the granola evenly on the baking sheet & put into the preheated oven
- Stir the granola every 5 minutes.. making sure to move the edges toward the centre..then flatten out the granola again so that it isn’t piled up anywhere
- Bake for approx 20-25 minutes until golden brown or longer if you want it browner
- Let cool on the baking sheet before serving … you can break up any clumps that there might be but i liked them so I left them…they are good for snacking on!
- I store my granola in a glass jar on my counter top
Serve with yogurt…add dried fruit to it if you want… make a granola yogurt parfait by layering the yogurt, granola, fruit, and repeat!
