2 Chai Seed Pudding Recipes..try them both!!

I didn’t really understand ‘chia seeds” until I was visiting my family & Karen was mixing chia seeds into almond milk with a bit of maple syrup & my granddaughter loves this! So… when I saw a post from Minimalist Baker for a Chocolate Overnight Chia Pudding..I had to try it..then Bon Appetit posted a different recipe for an overnight Chia Pudding.

The recipe from Minimalist Baker is my personal favourite, but Murray prefers the one from Bon Appetit. They are both very simple to make so my suggestion would be to make both recipes & then decide which you like! Or alternate them like I do!

There are suppose to be health benefits to eating chia seeds. I have looked it up but I am not sure if they are valid or not. Regardless, these two chia puddings are delicious & great as a snack, or part of breakfast. I eat some when I am starving before dinner instead of reaching for the cookies…though I do like cookies!!!

The one main thing about chia puddings are that they have to sit for hours or overnight before you eat them! So, don’t think you can whip either of these up & then dig in..the chia seeds do something & make these liquids thick… they expand in liquid so you have to wait!

Here are the two recipes

First one Overnight Chocolate Chia Seed Pudding Minimalist Baker Recipes

This recipe is very simple… I have not changed it except I have figured out how much maple syrup I like…there are options in the recipe. This pudding stays in the fridge for 4-5 days…which is good, it makes about 4 1/2 cup servings & one container of almond milk, the shelf stable kind, lasts 10 days after opening…so I can get 2 recipes out of one almond milk container! This chia pudding is very thick & dense.

Ingredients

1/4 cup cocao powder

Maple syrup… I like using 4 tbsp…the recipe gives options of 3-5 tbsp of maple syrup

pinch of salt

1/2 tsp vanilla

1 1/2 cups unsweetened almond milk… I bet you could use any milk substitute you prefer here

1/2 cup chia seeds

Method

  1. Sift the cocoa powder, to get rid of any lumps, into a bowl
  2. Add the maple syrup, salt & vanilla &a bit of the almond milk…it kind of looks like a paste
  3. Add the remaining almond milk & using a whisk, mix it well until t is completely combined
  4. Stir in the chia seeds & mis well
  5. You can keep this in the bowl you mixed it in or I put it into little containers as it is in the recipe from minimalist baker because I have little glass containers, but it is ok just to stay in the bowl & scoop out what you want to eat!
  6. This lasts for 4-5 days… which works out well…
  7. I eat this as is, but you could top it with berries, whipped cream, bananas, granola… those are just a few ideas!

This is the recipe from The Minimalist Baker

Second One Chocolate-Cashew Chia Pudding Recipe Bon Appetit

This recipe is sweetened with dates so the flavours delicious. The texture of the pudding is thick & more ‘puddingy’ then the previous recipe.The recipe says to make this is a blender…you mix the dates & nuts with the nut milk, but I do not have a blender so I used my food processor..it worked just fine! I also did not have any unsalted cashews that were called for in the recipe so I used almonds! This recipe takes a bit more time then the other one, but it is still simple to make & worth every minute it takes to make it! I made a change to this recipe only in the nuts I used! Also, bon appetite suggests serving this with a maple yogurt…I did not but you could check out the recipe with the link above to see what they suggest

Ingredients

13 Medjool pitted dates, these are the soft dates, not the ones for baking

2/3 cup raw cashews or I used almonds

3 tbsp cocoa powder

1 1/2 tsp kosher salt

1 tsp cinnamon

3 cups cashew milk ***the first time I made this I used almond milk. I could not tell the difference when I used cashew milk the second time

2 tsp vanilla

1/2 cup chia seeds

Method  

You can make this in a blender or a food processor. If you make this in a blender you can add all of the ingredients except the chia seeds together, mix well & then you will add the chia seeds after

  1. If using a food processor, blend the dates, make sure there are not any pits in the dates, nuts, cocoa powder, salt & cinnamon together until the nuts are a fine texture
  2. Add the milk & vanilla, mix to combine
  3. Put this mixture into a 1L or 4 quart container & add the chia seeds
  4. Mix well
  5. Cover the container & put in the refrigerator for AT LEAST 6 HOURS!! I let this sit in the fridge overnight!
  6. I eat this as is, but you can add fruit to it..oh once I put cut up bananas in this & all I can say is that it was fantastic!!!! And the berries as in the picture below is great!
