Carrot Rolled Dough – A Family Recipe

This recipe for a carrot rolled dough has been in my family forever I think. My Baba Goldie used it, then my mom, now I use it. It is a very special recipe to me….

I use this dough for Hamentashen. I like to eat other Hamentashen but I only use this dough for the ones I make with fruit fillings. I have started making Sprinkle Hamantaschen which uses a different more ‘cookie-like’ dough.

This dough can be used for Roly Poly as well. If you want to make Roly Poly, which is sweet fillings wrapped around dough… like jam, coconut, chopped nuts…one dough recipe is divided in 4 & rolled out into a rectangles, 9 x 12, then the fillings are put on…first jam, then coconut, then the nuts…this is rolled up with the ends tucked in, then baked & sliced. You can put candied fruit in, raisins, anything really. Today I tried the chocolate filling from Chocolate & Cinnamon Kokosh Cake, it tastes great except that I doubled the filling which meant that I put toooo much in & it oozed out all over the place.. so messy! But if you like chocolate…you will love it !

This recipe is parve, can be made in a mix master or food processor & it is really a wonderful dough….

Here is the recipe

Ingredients

1 cup sugar

1 cup vegetable oil

4 eggs

1 tsp vanilla

1 cup of grated carrots… this is about 3 carrots

4 cups flour

4 tsp baking powder

pinch of salt

Method 

  1. Grate the carrots & have them ready… I do this in the food processor…
  2. In the bowl of a mixer…. mix the sugar & oil
  3. Add the eggs & vanilla, mix well
  4. Add the grated carrots
  5. Scrape the sides of the bowl as needed
  6. Mix the flour, baking powder & pinch of salt together …I use a whisk or fork to do this
  7. Now have the mixer on slow speed otherwise the flour flys all over the place
  8. While the mixer is on, add the flout/baking powder/salt to the bowl gradually
  9. Mix really well
  10. Now, remove the dough to a lightly floured surface.
  11. Sometimes this dough is sticky & if it is, you will need to add some flour ….do this by taking a small handful & put it on the dough & knead it in. Do this as needed to make a soft dough that is not sticky. Be careful here not to put too much flour into the dough. It is a soft dough
  12. When you roll it out, the surface has to be floured as well as your rolling in

For the hamentaschen….take some dough…roll it out on a floured surfice…and using a cupo make circles, put the filling in & bring the sides up to make the triangle shape of the cookie   Bake in a preheated 350f oven…for about 12 minutes…but check…. I like them a golden brown..but the time depends on how thick you have rolled the dough …how big they are….how much filling you have put in…so, keep you eye on them. Cool on wire racks NOTE: I do not have filing recipes for the Hamentaschen…my friends make the filling ….my mom used to mix a pkg of prunes,,,,some raisins & some walnuts together & put that in….
  14. For Roly Poly, to repeat what I said above, divide the dough in 4 equal portions… roll to a 9 x 12 rectangle…. In 2 of them I put on 3 tbsp strawberry jam…a couple tbsp of unsweetened coconut….then I sprinkled on some sliced almonds..then rolled it up like a jelly roll tucking hte ends in….then the other 2 I used a chocolate filling…i mixed about 1/2 cup of cocoa, 1 cup of sugar, 1 tsp vanilla, pinch of salt and a whole egg together, divided it between the 2 ….smeared it on & rolled it up….
  15. The Roly Poly bake for about 35 minutes in a preheated 350f oven
  16. Cool the Roly Poly on the tray for a bit so it is firm enough to move to a wire rack to finish cooling…if it is too hot they will break
