Pumpkin Scones

I love scones, & am in search of the perfect pumpkin scone…. I tried this recipe & am going to try another one to compare the 2!!!

This recipe is from DINNER WITH JULIE. I googled pumpkin scones & there are tons of recipes, but the pictures on this website is what sold me on this recipe. Mine don’t look exactly like the ones on DINNER WITH JULIE, but I think mine look good & they taste good too!

These pumpkin scones are dense & not too sweet so the icing that is drizzled on them is perfect! Pretty quick & simple to make, they have been my breakfast for the last couple of days…I mean…pumpkin is a vegetable soooo, must be just right for breakfast!

Here is the recipe

Ingredients

For the scones

2 cups flour

1/4 cup brown sugar

1 tbsp baking powder

1/2 tsp pumpkin pie spice ..or cinnamon *** see below for a recipe for pumpkin pie spice

1/4 tsp salt

1/3 cup butter…I grated this or you can cut it into chunks

1/2 cup pumpkin puree *** I used canned pumpkin

1 large egg

1/3 cup milk

Pumpkin Pie Spice Recipe from Betty Crocker

3 tbsp cinnamon

2 tsp ground ginger

2 tsp nutmeg

1 1/2 tsp ground allspice

1 1/2 tsp ground cloves 

Mix these spices together to make pumpkin pie spice….store in a small jar…

For the icing drizzle

1/2 cup icing sugar

2 tbsp water

a drop of vanilla

Method

Preheat oven to 425f & line a baking sheet with parchment paper

  1. Combine the flour, brown sugar, baking powder, pumpkin pie spice & salt together in a bowl, mixing well
  2. Add the butter & using your hands, blend the butter into the flour so that the butter is small pieces coated in the flour…you could use a pastry blender you want but your fingers work great
  3. In a small bowl, mix the pumpkin puree, the egg & the milk together
  4. Add the pumpkin mixture to the flour mixture & mix, but don’t over-mix it… mix just until the dough comes together  *** I might have mixed mine too much which made the scones a bit tough but they softened up over the couple of days…
  5. Turn the dough out onto a very lightly floured work surface, just to form it into a ball
  6. Put this dough ball onto the prepared baking sheet.
  7. Form the dough into a circle & pat it down so that it is 1 inch thick & even thickness
  8. Cut into wedges & spread them out not the baking sheet
  9. You can brush them with milk if you want…or sprinkle them with sugar…*** I sprinkled them with some coarse sugar thinking that I would not drizzle them with icing but once I tasted them, I realized I wanted them sweeter, so next time I will not sprinkle them or brush them with milk…
  10. Bake for 18 – 20 minutes until they are brown….
  11. Remove from the oven & let them cool…
  12. Make the icing drizzle & using a fork dipped into the drizzle…drizzle the icing over the scones… YOU CAN DRIZZLE THEM WITH THE ICING WHILE THEY ARE STILL SLIGHTLY WARM IF YOU WANT…I DID IT WHEN THEY WERE COMPLETELY COOLED…
