Simple Coleslaw

This recipe is adapted from one my mother-in-law makes. I have cut down the sugar & some of the spices… My MIL always had coleslaw in the fridge whenever we went there to visit! Everyone ate coleslaw at least once a day!!

I am not sure that even buying ready made coleslaw is quicker then this recipe…maybe a bit but when you make it at home, you can control the amount of sugar that is in the coleslaw. I never buy it ready made because I guess my MIL spoiled us by making it herself & nothing comes close to hers!

This coleslaw recipe is vegan

This recipe is for a coleslaw with a vinaigrette… not a creamy dressing. For a creamy coleslaw I actually buy the Kraft coleslaw dressing which I love!! I don’t buy too many store bought salad dressings any more…not that I think there is anything wrong with it…I use ready made salad dressings in my Apricot Chicken & I use it other times too….but not that often.

Anyway, here is the recipe for this delicious simple homemade coleslaw

Ingredients

1 bag of ready sliced coleslaw mix….or of course you can hand cut some cabbage…if you do, then use 1/2 a cabbage & add some shredded carrot & purple cabbage…

Dressing

2-3 tbsp sugar

1/2 tsp salt

1/2 tsp pepper

1/2 tsp dry mustard

1/4 tsp garlic powder

1/4 cup oil

1/4 cup white vinegar

 

Method 

  1. Put the coleslaw mix into a bowl big enough so that you can toss the dressing into the salad…
  2. In a jar or bowl mix the dressing ingredients together & mix well
  3. Pour the dressing over the coleslaw mix, mix well
  4. Then I put this into a zip loc bag, mix it around well, & put it in the refrigerator to marinate for awhile…I like the cabbage to soften in the dressing….so it takes a few hours…but you can eat it at any time.. up to your personal taste…
  5. That’s it!!!
